How to Make French Onion Chicken Soup

This soup is easier to make than you might think! The key is giving the onions enough time to caramelize and build all that delicious flavor.

Caramelize the onions.

Melt the butter in a large Dutch oven or heavy-bottomed pot. Add the onions, thyme, bay leaves, salt, and pepper.

Cook the onions for 35-45 minutes, stirring frequently and scraping the bottom of the pot so they don’t burn. They should be soft and a beautiful amber brown.

Add the vegetables.

Add the remaining butter, carrots, celery, and garlic to the caramelized onions.

Cook for about 5 minutes, or until the carrots start to become tender.

Add the chicken and broth.

Season the chicken with salt, then add it to the pot along with the white grape juice and apple cider vinegar mixture.

Let the liquids cook off for a couple of minutes, then stir in the flour. Gradually add the chicken broth while stirring.

Add the chicken and bring the soup to a simmer.

Shred the chicken.

Cook until the chicken reaches 165°F, then remove it from the pot and shred it into bite-sized pieces.

Discard the bay leaves and return the chicken to the soup. Give it a taste and add more salt if needed.

Add the cheesy toast.

If you’re making the cheesy toasts, top slices of baguette with Gruyère cheese and broil until the cheese is melted and bubbling.

Keep a close eye on them because they cook quickly!

Serve.

Ladle the soup into bowls and top each one with a cheesy toast.

Then grab a spoon and enjoy!

French Onion Chicken Soup Variations

There are a few easy ways to switch up this soup depending on what you have on hand.

Chicken: Use either boneless, skinless chicken breasts or thighs. Both work great in this recipe.

Rotisserie chicken: Short on time? Use shredded rotisserie chicken instead. Add it during the simmering stage just to heat it through.

Cheese: Gruyère is delicious on the cheesy toasts, but Swiss, mozzarella, or cheddar can also be used.

No cheesy toast: You can skip the cheesy toast if you prefer. The soup is still delicious on its own or served with some crusty bread.

Expert Tips

Take your time with the onions. The caramelized onions are what give this soup so much flavor, so don’t rush this step.

Stir often. Make sure to stir and scrape the bottom of the pot while the onions are cooking so they don’t burn.

Use a heavy-bottomed pot. A Dutch oven works really well for this recipe and helps everything cook evenly.

Check the chicken. The chicken should reach an internal temperature of 165°F before you remove it from the soup.

Taste before serving. Broth can vary in saltiness, so give the soup a taste at the end and add more salt if needed.

Watch the cheesy toasts. The broiler works quickly! Keep an eye on the bread so the cheese gets melted and bubbly without burning.

Mistakes to Avoid

Don’t rush the onions. They need time to become soft and amber brown. This is where a lot of the flavor comes from.

Don’t skip cooking the flour. Let it cook for about 1 minute before adding the broth to help get rid of the raw flour taste.

Don’t overcook the chicken. Remove it from the soup once it reaches 165°F so it stays tender.

Don’t forget the bay leaves. They add great flavor while the soup cooks, but make sure to remove them before serving.

Don’t walk away from the broiler. The cheesy toasts only need 30 seconds to 1 minute, so they can burn quickly.

How to Store

Leftover soup is perfect for an easy lunch or dinner the next day.

Place the soup in an airtight container and refrigerate for up to 4 days.

You can also freeze the soup for up to 3 months. When you’re ready to eat, thaw and reheat until hot.

For the best texture, store the cheesy toasts separately and make them fresh when you’re ready to serve the soup.

How to Serve

The easiest way to serve this French Onion Chicken Soup is in a big bowl topped with a cheesy toast.

The melted Gruyère and crunchy baguette are such a delicious match with the rich, flavorful soup.

You can also serve it with a simple green salad or some extra crusty bread on the side.

This soup is hearty enough to serve as a main dish, making it perfect for a cozy weeknight dinner or a casual weekend meal.

Ingredients

For the Soup:

  • 3 pounds yellow onions (about 4 large or 6 medium)
  • 6 tbsp unsalted butter, divided
  • 1 tsp dried thyme
  • 2 dried bay leaves
  • 2 1/2 tsp kosher salt, divided, plus extra as needed
  • 1/2 tsp freshly ground black pepper
  • 3 medium carrots
  • 3 medium stalks celery
  • 3 cloves garlic
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 3/4 cup white grape juice + 1-2 teaspoons apple cider vinegar
  • 1/4 cup all-purpose flour
  • 6 cups low-sodium chicken broth

For the Cheesy Toasts (Optional):

  • 1/2 baguette
  • 2 ounces Gruyère cheese (about heaping 1/2 cup)

Instructions

1. Prepare the Soup:

  • Peel, halve, and thinly slice the onions (about 10 cups).
  • In a large Dutch oven or heavy-bottomed pot, melt 4 tablespoons of butter over medium heat. Add the onions, thyme, bay leaves, 1 1/2 teaspoons of kosher salt, and black pepper. Cook, stirring frequently and scraping the bottom of the pot to avoid burning, for 35-45 minutes until the onions are soft and amber brown.

2. Prepare the Vegetables:

  • While the onions cook, peel and slice the carrots into 1/4-inch-thick rounds (about 1 1/4 cups). Slice the celery into 1/4-inch-thick pieces (about 1 cup) and mince the garlic cloves. Set them aside in a bowl.

3. Add Vegetables and Chicken:

  • Add the remaining 2 tablespoons of butter to the onions. Once melted, stir in the carrots, celery, and garlic. Cook, stirring occasionally, until the carrots are tender, about 5 minutes.
  • Season the chicken breasts or thighs with the remaining 1 teaspoon of salt. If using thick chicken breasts, butterfly them to create thinner pieces.

4. Add Liquids and Simmer:

  • Pour in the white grape juice + vinegar mixture. Stir and let the liquids cook off for 2-3 minutes.
  • Sprinkle in the flour and cook, stirring constantly, for 1 minute to remove the floury taste.
  • Gradually pour in the chicken broth while stirring. Add the chicken pieces in a single layer. Increase the heat to medium-high and bring the mixture to a simmer.
  • Once simmering, reduce the heat and cook until the chicken reaches an internal temperature of 165°F (about 10 minutes for thighs, or 12-20 minutes for breasts). Stir occasionally, scraping the bottom of the pot.

5. Shred the Chicken:

  • Remove the chicken from the pot and shred it into bite-sized pieces using two forks. Discard the bay leaves. Return the shredded chicken to the soup, and taste. Add more salt if needed.

6. Prepare the Cheesy Toasts (Optional):

  • Preheat the oven broiler and position a rack 3-4 inches below the broiler. Slice the baguette into 1-inch-thick pieces (about 8 slices). Arrange them on a rimmed baking sheet.
  • Grate the Gruyère cheese (about 1/2 cup) and sprinkle it evenly over the bread.
  • Broil the bread for 30 seconds to 1 minute, or until the cheese is melted and bubbling.

7. Serve:

  • Ladle the soup into bowls and top each with a cheesy toast. Enjoy!

Yes! This soup actually tastes even better the next day. Just store it in an airtight container in the fridge for up to 4 days, or freeze it for up to 3 months.
