For Green Chile Chicken Enchilada Casserole
- Chicken – Use 4 boneless, skinless chicken breasts for a lean protein. You can also use chicken thighs for a juicier alternative.
- Garlic Salt – Season the chicken with garlic salt for extra flavor.
- Corn Tortillas – 18 (6-inch) corn tortillas, torn in half for easier layering.
- Green Chile Enchilada Sauce – 1 (28 oz) can for a mild, tangy base with a slight kick.
- Monterey Jack Cheese – 1 (16 oz) package, shredded for a smooth melt and creamy texture.
- Sour Cream – 1 (8 oz) container, reduced-fat, for richness and creaminess.

Step-by-Step Instructions
Step 1: Bake the chicken
Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish. Season the chicken breasts with garlic salt and place them in the prepared dish. Bake for about 45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the juices run clear. Remove the chicken from the oven, let it cool slightly, then shred it into bite-sized pieces.
Step 2: Prepare the tortillas
While the chicken is cooling, use metal tongs to carefully char the tortilla halves over an open flame for about 1 minute, turning them until they are lightly puffed and slightly toasted. If you prefer, you can skip this step and simply use the tortillas as they are.
Step 3: Start the first layer
Pour about ½ inch of green chile enchilada sauce into the bottom of the baking dish. Arrange 6 tortilla halves in a single layer over the sauce.
Step 4: Add the filling
Spread half of the shredded chicken over the tortillas. Top with one-third of the Monterey Jack cheese, half of the sour cream, and one-third of the remaining enchilada sauce, spreading everything as evenly as possible.
Step 5: Repeat the layers
Create a second layer using the remaining tortilla halves, shredded chicken, cheese, sour cream, and enchilada sauce until all of the ingredients have been used.
Step 6: Bake the casserole
Cover the baking dish with foil and bake for 45 minutes, or until the casserole is hot, bubbly, and the cheese has melted throughout.
Step 7: Rest and serve
Remove the casserole from the oven and let it cool for a few minutes before slicing. Serve warm and enjoy!

Mistakes to Avoid
A few simple tips will help your casserole turn out perfectly every time.
- Use a 9×13-inch baking dish. A smaller dish can become too full and make layering difficult.
- Don’t skip the resting time. Letting the casserole sit for several minutes helps it hold together when serving.
- Don’t overbake. Bake just until the cheese is melted and bubbly to keep the chicken tender.
- Cover with foil first. This prevents the cheese from browning too quickly before the casserole is fully heated.
- Warm the tortillas if needed. Slightly warming them makes layering easier and helps prevent cracking.
What to Serve With It + Variations
This casserole is filling on its own, but it’s even better with a few simple sides.
Serve it with:
- Mexican rice
- Cilantro lime rice
- Refried or black beans
- Fresh avocado or guacamole
- Salsa and sour cream
- A crisp green salad
Easy variations:
- Add a can of diced green chiles for even more flavor.
- Use rotisserie chicken to save time.
- Swap Monterey Jack for Pepper Jack if you like extra heat.
- Stir in black beans or corn for additional texture and heartiness.
- Top with fresh cilantro, diced tomatoes, sliced jalapeños, or green onions before serving.

- Can I use store-bought rotisserie chicken?
Absolutely! Grab a rotisserie chicken to save time. Shred it up, and you’re ready to go. Skip the baking and move straight to the casserole assembly! - Do I really need to char the tortillas?
Not at all! If you’re looking for a shortcut, just tear the tortillas into quarters. This way, they soak up the sauce beautifully without any extra work! - Can I prep the casserole ahead of time?
Yes, you can assemble the casserole earlier in the day, cover it, and store it in the fridge. When you’re ready, just pop it in the oven and bake as usual! - Can I substitute the sour cream for something else?
Totally! Greek yogurt works just as well, and it’ll add a bit of tang to the dish without sacrificing creaminess. - How can I make the casserole spicier?
Simple! Add a couple of diced jalapeños or a sprinkle of cayenne pepper to give it an extra kick. Adjust to your heat preference—make it as spicy as you like!

I don’t see the size of the baking dish or how many people it will serve.
Hi Kathy! 😊 Thanks for asking. This recipe makes about 8 servings. A 9×13-inch baking dish works best for layering all of the ingredients comfortably. I’ll make a note to clarify that in the recipe. Hope you enjoy it! ❤️
I see green veggies (?} in the picture but I don’t see them in the recipe. Can you explain please?
Hi Jean! 😊 Great question. The green pieces you see in the photo are green chiles from the enchilada sauce, which can sometimes be more visible depending on the brand used. Some versions of this recipe also include extra diced green chiles for added flavor and texture, but they’re not required for the casserole to turn out delicious. Thanks for pointing that out, and I hope you enjoy the recipe! 🌶️🧀❤️
I’m gonna say use a 9×13 pan. NOT medium. Everything does not fit in a medium. I’m going with it but with the cover on it will NOT brown cheese especially since everything is packed and overflowing. My plan after tenting the foil
Over is to take it off after 20 minutes to get the cheese to brown. Just guessing right now. I’m sure it’s going to taste amazing.
Hi Sally! 😊 Thank you for sharing your experience and the helpful tip. A 9×13-inch baking dish is definitely a great choice for this recipe, especially if you prefer a little extra room for the layers. Your plan to remove the foil during the last part of baking to let the cheese brown sounds perfect! We appreciate you taking the time to leave your notes, and we hope you loved the casserole as much as we do. ❤️🧀
