Easy Blueberry Baked Oatmeal

Easy Blueberry Baked Oatmeal

This blueberry baked oatmeal is one of my favorite make-ahead breakfasts. It’s packed with hearty oats, sweet blueberries, ripe banana, and warm cinnamon, then baked until soft and perfectly golden.

If your mornings are always rushed, this recipe is about to become your new favorite. You can mix everything together in just a few minutes, bake it, and enjoy a wholesome breakfast that’s ready for the week.

Every slice is soft, naturally sweet, and filled with juicy blueberries in every bite. It reheats beautifully, making it perfect for busy weekdays, school mornings, or a relaxing weekend brunch.

Why You’ll Love This Recipe

  • Perfect for meal prep. Bake it once and enjoy breakfast for days.
  • Easy to make. Just stir everything together, bake, and serve.
  • Naturally sweet. Banana, maple syrup, and blueberries provide plenty of flavor without being overly sweet.
  • Soft with the perfect texture. Tender baked oats with juicy blueberries and crunchy almonds in every bite.
  • Freezer-friendly. Store extra portions for a quick homemade breakfast anytime.
  • Easy to customize. Swap the fruit, change the nuts, or add your favorite mix-ins to make it your own.

Ingredients You’ll Need

  • Old-Fashioned Rolled Oats – The base of the recipe. Rolled oats create a soft, hearty texture that holds up well during baking. Avoid quick oats or steel-cut oats, as they won’t produce the same results.
  • Milk – Adds moisture and helps the oats bake up tender. Dairy or your favorite unsweetened plant-based milk both work well.
  • Ripe Banana – Naturally sweetens the oatmeal while adding moisture and helping create a soft texture.
  • Eggs – Bind everything together so the baked oatmeal slices neatly after baking.
  • Avocado Oil – Keeps the oatmeal moist without adding a strong flavor. Melted butter or coconut oil are great substitutes if preferred.
  • Pure Maple Syrup – Adds just the right amount of natural sweetness with a rich, caramel-like flavor. Honey can also be used.
  • Vanilla Extract – Enhances the sweetness and brings all of the flavors together.
  • Baking Powder – Gives the oatmeal a light, fluffy texture instead of becoming dense.
  • Ground Cinnamon – Adds warm, cozy flavor that pairs perfectly with the blueberries and banana.
  • Ground Nutmeg – A small amount adds extra warmth and depth without overpowering the recipe.
  • Fine Salt – Balances the sweetness and helps all of the flavors shine.
  • Sliced Almonds – Add a light crunch and nutty flavor. Feel free to leave them out for a nut-free version.
  • Fresh or Frozen Blueberries – The star ingredient! They become juicy as they bake, adding bursts of sweetness throughout every bite. Frozen berries can be used straight from the freezer—no need to thaw.

Easy Ingredient Swaps

  • Banana: Replace with an equal amount of unsweetened applesauce.
  • Avocado Oil: Swap for melted butter or coconut oil.
  • Maple Syrup: Honey works just as well.
  • Milk: Use dairy milk, almond milk, oat milk, or soy milk.
  • Almonds: Pecans, chooclate chips, walnuts, or simply omit them for a nut-free recipe.

How to Make Blueberry Baked Oatmeal

Step 1: Prepare the Baking Dish

Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch or 9×9-inch baking dish with cooking spray or a little oil to prevent sticking.

Step 2: Mix the Wet and Dry Ingredients

In a large mixing bowl, combine the rolled oats, milk, mashed banana, eggs, avocado oil, maple syrup, vanilla extract, baking powder, cinnamon, nutmeg, and salt. Stir until everything is evenly mixed and the oats are fully coated.

Step 3: Fold in the Blueberries and Almonds

Gently stir in the sliced almonds and blueberries. Be careful not to overmix, especially if you’re using fresh berries, so they stay whole and evenly distributed throughout the batter.

Step 4: Transfer to the Baking Dish

Pour the oatmeal mixture into the prepared baking dish and spread it into an even layer. For a beautiful finish, sprinkle a few extra blueberries and sliced almonds over the top before baking.

Step 5: Bake Until Set

Bake for 30 to 35 minutes, or until the center is set and the top is lightly golden. The oatmeal should feel firm in the middle but still be soft and moist.

Step 6: Cool and Slice

Remove the dish from the oven and let it rest for about 10 minutes. This allows the oatmeal to firm up, making it much easier to slice into neat squares.

Step 7: Serve and Enjoy

Serve warm straight from the oven, at room temperature, or chilled from the refrigerator. Top with Greek yogurt, a drizzle of maple syrup, fresh berries, or an extra sprinkle of cinnamon for even more flavor.

Step 8: Store the Leftovers

Place any leftovers in an airtight container and refrigerate for up to 5 days. For longer storage, freeze individual portions for up to 3 months. Reheat in the microwave for 30–60 seconds or warm in a 300°F oven until heated through.

Make Ahead + Freezing

To make in advance:

You can easily prepare this recipe the night before. Simply mix all of the ingredients together, cover the bowl or baking dish, and refrigerate overnight. In the morning, let it sit on the counter while the oven preheats, then bake as directed.

To freeze:

I like to freeze baked oatmeal after it’s cooked and cooled. Slice it into individual portions, wrap each piece tightly, and store them in a freezer-safe container or bag for up to 3 months. When you’re ready to enjoy one, microwave it for 1 to 2 minutes or warm it in a 300°F oven until heated through.

1. Can I use frozen blueberries?

Yes! Frozen blueberries work just as well as fresh. There’s no need to thaw them first—just stir them into the batter straight from the freezer. They may add a few extra minutes to the baking time, but they’ll still turn out delicious.

2. Can I make this baked oatmeal ahead of time?

Absolutely! This is one of my favorite meal prep breakfasts. Bake it ahead, let it cool completely, then store it in the refrigerator. Simply warm up a slice in the microwave for an easy breakfast all week long.

3. Can I use quick oats or steel-cut oats?

I recommend sticking with old-fashioned rolled oats for the best texture. Quick oats tend to become too soft, while steel-cut oats need much longer to cook and won’t bake properly in this recipe.

4. How do I know when the baked oatmeal is done?

The center should be set and the top lightly golden. If you insert a knife or toothpick into the middle, it should come out mostly clean with just a few moist crumbs attached. Let it cool for about 10 minutes before slicing so it holds together nicely.

5. Can I freeze baked oatmeal?

Yes! Once the oatmeal has cooled completely, cut it into individual portions and freeze them in an airtight container or freezer-safe bag for up to 3 months. Thaw overnight in the refrigerator or reheat straight from frozen for a quick breakfast.
