Step 2: Cover the bowl with plastic wrap and let the dough rise at room temperature for about 1 hour, or until it has doubled in size.

Step 3: While the dough is rising, prepare the filling. Mix the brown sugar, granulated sugar, and cinnamon together in a bowl. Grease a 9×13-inch baking dish and set aside.

Step 4: Once the dough has risen, gently punch it down and roll it out onto a lightly floured surface into a large rectangle, about 12×18 inches. Spread the softened butter evenly over the dough, then sprinkle the chopped apples and cinnamon sugar mixture across the surface. Starting from the long edge closest to you, tightly roll the dough into a log. Pinch the seam closed, then slice into 12–15 rolls.   • 4 tablespoons salted butter, at room temperature
  • 6 ounces cream cheese, at room temperature
  • 1/4 cup maple syrup
  • 2–3 cups powdered sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Add the warm milk, yeast, and brown sugar to the bowl of a stand mixer fitted with the dough hook. Let the mixture stand for 5–10 minutes, or until foamy. Add the butter, eggs, 3 1/2 cups flour, and kosher salt. Mix on low speed for about 4–5 minutes, until the dough comes together and the flour is fully incorporated.   2. Cover the bowl tightly with plastic wrap and leave the dough to rise at room temperature for about 1 hour, or until doubled in size.
