A cozy, wholesome breakfast made with rolled oats, ripe banana, juicy blueberries, warm spices, and sliced almonds. This easy baked oatmeal is naturally sweetened with maple syrup, simple to prepare, and perfect for meal prep.
1 ½ cups fresh or frozen blueberries (do not thaw if frozen)
Instructions
Preheat the oven to 375℉ and lightly coat a 9×9-inch or 8×8-inch baking dish with cooking spray.
In a large mixing bowl, stir together the rolled oats, milk, mashed banana, eggs, avocado oil, maple syrup, vanilla extract, baking powder, cinnamon, nutmeg, and salt until everything is evenly combined.
Gently fold the sliced almonds and blueberries into the oat mixture.
Pour the mixture into the prepared baking dish. If desired, scatter a few extra blueberries and sliced almonds over the top.
Bake for 30 to 35 minutes, or until the center is fully set.
Remove from the oven and allow the baked oatmeal to rest for 10 minutes before cutting into portions.
Serve warm, at room temperature, or chilled with your favorite toppings such as yogurt, whipped topping, maple syrup, or an extra sprinkle of cinnamon.
Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months. Reheat individual servings in the microwave for 30–60 seconds, or warm them in a 300°F oven for 3–4 minutes.
Notes
For a gluten-free version, use certified gluten-free rolled oats.
To make this recipe dairy-free, choose an unsweetened plant-based milk.
For a nut-free option, simply leave out the sliced almonds.
To make it egg-free, whisk together 2 tablespoons ground flax meal and 5 tablespoons water. Let the mixture sit for 5–10 minutes until thickened, then use it in place of the eggs.
Substitutions
Replace the mashed banana with an equal amount of applesauce.
Swap the avocado oil for melted butter or coconut oil.
