Lasagna Soup Recipe

A rich, tomato-based soup with ground beef, Italian sausage, lasagna noodles, and classic Italian seasonings. Each bowl is finished with Parmesan, mozzarella, ricotta, and parsley for the familiar flavors of lasagna in soup form.

Ingredients

  • 1/2 pound ground beef
  • 1/2 pound sweet Italian sausage
  • 1 yellow onion
  • 3 cloves garlic
  • 4 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried Basil
  • 1 tsp sugar
  • 1 tsp hot sauce, optional but recommended
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 pinch red pepper flakes
  • 5 cups  chicken broth
  • 14.5 oz crushed tomatoes
  • 14.5 oz diced tomatoes, undrained
  • 1  bay leaf
  • 6  lasagna noodles

For Serving

  • 1/2 cup Parmesan Cheese, freshly grated
  • 1 cup  Mozzarella Cheese, shredded from a block
  • 8 oz Ricotta Cheese
  • Fresh Parsley, roughly chopped

Instructions

  • Place the ground beef and sausage in a 4-quart soup pot over medium-high heat. Cook while breaking the meat into crumbles. About halfway through cooking, add the onions and continue cooking until they soften, about 5 minutes. Drain off any grease. Stir in the garlic and cook for 1 minute.
  • Add 4 Tbsp. tomato paste, 1 tsp dried oregano, 1 tsp dried basil, 1 tsp sugar, 1 tsp hot sauce, ½ tsp salt, ¼ tsp pepper, and a pinch of red pepper flakes. Mix everything together thoroughly.
  • Pour in the chicken broth. As you stir, use a silicone spatula to scrape the bottom and sides of the pot and loosen anything that has stuck to the surface.
  • Stir in the crushed tomatoes, undrained diced tomatoes, and bay leaf. Bring the soup to a boil, then lower the heat so it simmers.
  • If you have a Parmesan rind available, place it in the pot during the simmering stage for additional flavor.
  • Keep the soup at a gentle simmer while bringing a separate pot of salted water to a boil for the lasagna noodles. Before cooking the noodles, taste the soup and adjust the seasonings if necessary. Keep in mind that the flavor will become more concentrated as the soup continues to simmer.
  • Break the lasagna noodles in half and cook them according to the package instructions. Drain, then cut the noodles into smaller strips. Add them to the soup. Alternatively, place the noodles directly into individual serving bowls. If you expect leftovers—particularly if you intend to freeze the soup—keeping the noodles separate and cooking fresh noodles when serving is preferable.
  • Take out the bay leaf. Divide the soup among bowls and top each serving with Parmesan, Mozzarella, Ricotta, and parsley.

Recipe Notes

  • Keep the noodles separate for leftovers. Lasagna noodles continue to absorb broth as they sit, so cook and store them separately if you’re planning to refrigerate or freeze the soup.
  • Beef broth works too. You can replace the chicken broth with beef broth or use a combination of both.
  • Try a different pasta. You can use about 6 ounces (just under ½ lb.) of another pasta shape instead of lasagna noodles. Bowtie pasta is a great option.
  • For a creamier soup: Add up to ½ cup cream when you add the crushed tomatoes.
  • Cooking the noodles in the soup: Add 1 extra cup of broth, then let the noodles bubble gently in the soup for about 12 minutes. Cooking them separately is recommended for the best texture.
  • Add a Parmesan rind. If you have one, let it simmer with the soup for an easy boost of savory flavor. Remove it before serving.
  • Don’t skip the cheese toppings. Mozzarella, Parmesan, and Ricotta give each bowl the creamy, cheesy finish that makes it taste like lasagna.
  • Storage: Refrigerate in an airtight container for up to 3 days, or freeze for up to 3 months, preferably without the noodles.
