Cook the tomatoes and bell pepper.
Warm the olive oil in a large pan over medium-high heat. Add the diced bell pepper and halved cherry tomatoes. Sauté for 4 to 5 minutes, stirring occasionally, until the tomatoes soften and release their juices. Stir in the garlic and cook for 1 additional minute. -
