Easy Creamy Tuscan-Style Chicken Recipe

There are nights when you want a dinner that feels a little extra comforting,  the kind you make when you want the kitchen to smell amazing  and the meal to feel special without much effort.

This creamy Tuscan chicken has become one of those recipes for us.
As the chicken sears and the garlic, sun-dried tomatoes,  and cream simmer together, everything comes together in one pan.

The result is a rich, cozy sauce that feels both simple and indulgent.
It’s the kind of meal you make once—  and then find yourself craving again the very next week.

For the Tuscan Chicken

  • Chicken Breasts – Boneless, skinless chicken breasts cook quickly and stay tender. Searing them first adds flavor and helps lock in moisture.
  • Italian Seasoning – A blend of classic herbs that gives the chicken its savory, Mediterranean-inspired base flavor.
  • Kosher Salt & Black Pepper – Simple seasoning that enhances every layer of the dish without overpowering the sauce.
  • Extra Virgin Olive Oil – Used for searing the chicken and sautéing the aromatics, adding richness and depth.
  • Garlic – Fresh garlic brings bold, savory flavor and is key to the signature Tuscan taste.
  • Yellow Onion – Softens as it cooks, adding subtle sweetness and balancing the richness of the cream sauce.
  • Sun-Dried Tomatoes – These add concentrated tomato flavor and a slightly tangy bite that cuts through the creaminess.
  • Baby Spinach – Wilts gently into the sauce, adding color, freshness, and a boost of nutrients.

For the Creamy Sauce

  • Heavy Cream – The base of the sauce, making it rich, smooth, and luxurious.
  • Parmesan Cheese – Adds saltiness and umami while helping thicken the sauce as it simmers.

Easy Creamy Tuscan-Style Chicken Recipe

Tender chicken breasts are pan-seared until golden, then finished in a luxurious cream sauce filled with garlic, sun-dried tomatoes, and wilted spinach. This one-pan meal feels elegant yet comes together quickly, making it ideal for both weeknights and special occasions.

Ingredients

  • 4 (6-ounce) boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning (or a blend of oregano, thyme, basil, and rosemary)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • ¼ cup finely chopped yellow onion
  • ½ cup sun-dried tomatoes, thinly sliced
  • 2 cups baby spinach
  • 1½ cups heavy cream
  • ¼ cup freshly grated parmesan cheese

Instructions

  1. Season the chicken. Sprinkle both sides of each chicken breast evenly with Italian seasoning, salt, and pepper.
  2. Brown the chicken. Heat 2 tablespoons of the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 3 to 4 minutes per side, until nicely browned. Transfer the chicken to a plate and set aside.
  3. Soften the onion. Add the remaining tablespoon of olive oil to the same skillet. Stir in the chopped onion and cook for 2 to 3 minutes, until tender.
  4. Build the flavor base. Add the garlic and sun-dried tomatoes to the pan and cook for about 1 minute, stirring until aromatic.
  5. Wilt the spinach. Add the spinach and cook for another minute, just until it begins to collapse.
  6. Create the sauce. Pour in the heavy cream and stir in the parmesan cheese. Mix well and bring the sauce to a gentle simmer.
  7. Finish the dish. Return the chicken breasts to the skillet and let them cook in the sauce for about 5 minutes, or until heated through.
Notes
  • When using especially thick chicken breasts, extend the searing time slightly or flatten them for more even cooking.
  • Nutritional yeast can be substituted for parmesan; use 1 to 2 tablespoons if needed.
  • Choose sun-dried tomatoes packed in oil for the best texture and flavor.

1. Can I use chicken thighs instead of chicken breasts?

Absolutely yes. I’ve made this with both, and it works beautifully either way. Chicken thighs are juicier and a bit more forgiving, so if that’s what you have (or prefer), go for it. Just keep an eye on the cooking time if they’re extra thick.

 

2. My sauce looks a bit thin — what should I do?

Easy fix. Just let it simmer uncovered for a few extra minutes and it will thicken up naturally. The parmesan also helps with this. If you’re really in a hurry, a tiny splash of cornstarch mixed with cold water will do the trick.

 

3. Can I make this without dairy?

Yes! Swap the cream for a dairy-free alternative like coconut cream, and use nutritional yeast instead of parmesan. The flavour will be slightly different, but still delicious — and you’ll keep that creamy, comforting vibe.

 

4. What’s the best thing to serve this with?

Anything that can mop up that sauce. Pasta, rice, mashed potatoes, or crusty bread are all winners here. I’ve even spooned it over zucchini noodles when I’m pretending to be virtuous.

 

5. Why didn’t my chicken get golden?

This usually comes down to heat. Make sure the pan is properly hot before adding the chicken, and don’t crowd the pan. If there’s too much in there at once, the chicken steams instead of browns — and golden chicken equals better flavour.
