Best Green Chile Chicken Enchilada Casserole

The layered, no-roll casserole that’s been winning over picky eaters for decades.

You know that one recipe that gets passed around the neighborhood, shows up at every potluck, and somehow ends up in the local paper? This is that recipe.

A layered green chile chicken enchilada casserole built the old-fashioned way — charred corn tortillas, tender shredded chicken, rivers of green chile enchilada sauce, and enough Monterey Jack to make everyone at the table very, very happy.

I love this version because it actually takes time to build something special. Yes, it’s 1 hour and 45 minutes total — but most of that is hands-off oven time while your house fills with the kind of smell that makes people wander into the kitchen asking “Is it ready yet?”

The secret step that separates this from every other green chile chicken enchilada casserole you’ve made?
Charring the tortillas directly over the gas flame.

One minute per piece, and suddenly you have this smoky, slightly puffed tortilla that holds up beautifully in the layers and adds a depth of flavor that you simply cannot get from raw tortillas.
Try it once and you’ll never skip it again.

Ingredients for the Best Green Chile Chicken Enchilada Casserole

For the Chicken

  • Boneless skinless chicken breasts (4 halves) — Baked right in the dish and shredded with two forks. If you want to save 45 minutes, a rotisserie chicken works perfectly here — just shred it up and you’re ready to layer.
  • Garlic salt (to taste) — Simple seasoning that goes a long way. I use about ¾ teaspoon — enough to season the chicken without overpowering the green chile sauce. You can swap for garlic powder plus a pinch of kosher salt if you prefer.

For the Layers

  • Corn tortillas, 18 (6-inch), torn in half — Corn tortillas are the backbone of a great layered green chile chicken enchilada casserole. They’re sturdier than flour and hold up in the layers without getting soggy. Tear them in half (or char them over the flame for the full experience — more on that below).
  • Green chile enchilada sauce (28 oz can) — This is the soul of the dish. It goes between every layer and over the top. I love Hatch brand or Las Palmas — both have a clean, roasted green chile flavor that you can taste in every single bite.
  • Monterey Jack cheese (16 oz, shredded) — A full pound of cheese, divided across three layers plus the top. It melts beautifully and has just enough mild heat to complement the green chile sauce without fighting it. Shred it fresh from the block if you can.
  • Reduced-fat sour cream (8 oz) — Dotted between the layers for creaminess and that slight tang that balances the richness. Full-fat works just as well if you prefer it.

Prep Time: 15 minutes
Cook Time: 1 hour 30 minutes
Total Time: 1 hour 45 minutes
Servings: 8

Ingredients

  • 4 boneless skinless chicken breast halves
  • Garlic salt, to taste (about ¾ tsp)
  • 18 (6-inch) corn tortillas, torn in half
  • 28 oz green chile enchilada sauce
  • 16 oz Monterey Jack cheese, shredded and divided
  • 8 oz reduced-fat sour cream

Instructions

  • Preheat the oven to 350°F. Lightly grease a medium baking dish. Season the chicken breasts on both sides with garlic salt and arrange in the dish. Bake for 45 minutes until cooked through (internal temp 165°F). Cool, then shred with two forks. Set aside.
  • Char each torn tortilla half over a gas burner flame using metal tongs for about 1 minute until lightly puffed with char marks. Alternatively, toast in a dry cast iron skillet over high heat for 30–45 seconds per side. Set aside.
  • Pour about ½ inch of enchilada sauce into the bottom of your baking dish and spread to coat fully. Arrange 6 charred tortilla halves over the sauce in a single layer.
  • Top with half the shredded chicken, half the sour cream, one-third of the cheese, and one-third of the remaining enchilada sauce. Spread each layer evenly.
  • Repeat: add another layer of 6 tortilla halves, remaining chicken, remaining sour cream, another third of the cheese, and another third of the sauce.
  • Arrange the final 6 tortilla halves on top. Coat them thoroughly with the remaining enchilada sauce, covering all edges. Sprinkle the last of the Monterey Jack generously over the top.
  • Cover tightly with foil and bake for 45 minutes at 350°F, until the cheese is fully melted and the sauce is bubbling at the edges. Rest for 8–10 minutes before slicing and serving.

Notes

Notes
  • The char step: Don't skip it. 8 minutes of flame-toasting your tortillas adds smokiness and prevents sogginess. It's the single biggest upgrade in this recipe.
  • Rotisserie shortcut: Use a store-bought rotisserie chicken instead of baking your own to cut 45 minutes off the prep.
  • Make-ahead: Assemble up to 24 hours in advance, cover, and refrigerate. Add 8–10 extra minutes to bake time from cold.
  • Storage: Refrigerate covered for up to 3–4 days. Freeze unbaked for up to 2 months.
  • Spice it up: Add diced jalapeños to the chicken layers or use hot green chile enchilada sauce.

1. Can I make green chile chicken enchilada casserole ahead of time?

Yes — and it actually gets better for it. Assemble the whole thing up to 24 hours ahead, cover it tightly with foil, and refrigerate. The layers have time to meld together and the whole casserole bakes up even more cohesive the next day. Just add 8–10 extra minutes to the bake time since it’s starting cold.

2. Can I use flour tortillas instead of corn tortillas in green chile chicken enchilada casserole?

You can, but corn is strongly recommended for the layered method. Corn tortillas are thicker, sturdier, and hold up in the sauce without turning soft and gummy the way flour tortillas tend to. If flour is all you have, tear them into quarters and layer quickly — they’ll still taste great, just softer in texture.

3. How do I keep my green chile chicken enchilada casserole from getting soggy?

Three things: use corn tortillas (not flour), char or toast them before layering to create a moisture barrier, and let the finished casserole rest 8–10 minutes before cutting. Going straight from oven to knife results in a soupy mess. Those 10 minutes of resting let everything firm up into clean, scoopable layers.

4. Can I make this a creamy green chile chicken enchilada casserole with cream of mushroom?

Absolutely — it’s a beloved variation. Mix one can of cream of mushroom soup with the sour cream instead of using sour cream alone. It creates a thicker, richer sauce with a savory depth that’s especially cozy on cold winter nights. Cream of chicken works beautifully here too.

5. Is green chile chicken enchilada casserole spicy?

Not at all, as written. Green chile enchilada sauce is typically mild — it’s earthy and slightly tangy with very little heat. If you want to bring the fire, add diced jalapeños to the chicken layers, use hot green chile sauce, or top with sliced pickled jalapeños before serving. Totally customizable.
