Easy Creamy Spinach & Feta Baked Chicken

Some nights call for comfort food that doesn’t demand much time or effort.
This spinach and feta baked chicken has become one of those reliable dinners I turn to when I want something creamy, satisfying, and a little special.

As it bakes, the cheese softens and melts, the herbs become fragrant, and the chicken stays tender and juicy underneath it all.

It’s the kind of simple, nourishing meal that feels perfect for a relaxed weeknight—easy to prep, baked in one pan, and just indulgent enough to feel like a treat.

For Spinach and Feta Baked Chicken

  • Chicken – Boneless, skinless chicken breasts or thighs both work well here. Breasts are lean and tender, while thighs stay extra juicy if you prefer dark meat.
  • Cream Cheese – This creates the rich, creamy base for the topping and helps everything melt together smoothly.
  • Feta Cheese – Salty and tangy, feta adds bold flavor that balances the creaminess of the cheese mixture.
  • Spinach – Chopped spinach brings freshness and a pop of color, keeping the dish from feeling too heavy.
  • Garlic – Optional, but highly recommended if you enjoy a little extra depth and savory flavor.
  • Green Onions – These add mild onion flavor and a bit of brightness to the creamy topping.
  • Parsley and Dill – Fresh herbs give the dish a light, Mediterranean feel and keep the flavors vibrant.
  • Lemon Zest – Just a small amount lifts the entire dish and cuts through the richness of the cheese.
  • Mozzarella Cheese – Sprinkled on top, this melts beautifully and gives you that irresistible cheesy finish.
  • Salt and Pepper – Used lightly to season the chicken and bring all the flavors together.

  • 8 ounces feta cheese, crumbled
  • 1 cup spinach, coarsely chopped
  • 1 clove garlic, grated (optional)

  1. Can I use frozen spinach instead of fresh?
Yes, absolutely. Just make sure it’s fully thawed and squeezed really well so you don’t end up with extra liquid in the topping. Watery spinach = sad, soggy chicken.

  1. Can I use chicken thighs instead of breasts?
Definitely. I’ve made this with both, and it works beautifully either way. Thighs stay extra juicy and forgiving, while breasts are leaner—use what you love or already have.

  1. Do I really need to soften the cream cheese first?
Yes, this one’s worth doing. Softened cream cheese mixes smoothly with the feta and herbs, which means no lumps and a much nicer topping overall.

  1. How do I know when the chicken is cooked through?
The chicken is ready when it’s no longer pink inside and reaches 165°F / 74°C in the thickest part. The cheese should be melted, lightly golden, and bubbling around the edges.

  1. Can I prep this ahead of time?
You sure can. Mix the spinach and feta topping up to a day ahead and keep it in the fridge. When it’s dinnertime, spread it over the chicken and bake—easy win for busy nights.
