Ingredients
For Chicken Thighs- 5 chicken thighs skinless & boneless, dried with paper towel
- 1 teaspoon 21 Salute Seasoning from Trader Joe's or use any poultry seasoning of your choice
- salt & pepper to taste
- 2 tablespoons butter unsalted
- 2 tablespoons butter
- 2 tablespoons garlic finely chopped
- 2 tablespoons flour
- 1 cup chicken broth
- ½ cup heavy whipping cream
- ½ cup Parmesan cheese or prieve cheese, finely grated
- salt & pepper to taste
- 2 teaspoon dill finely chopped for garnish, optional
Instructions
- Preheat the oven to 375°F. Season the chicken thighs on both sides with the poultry seasoning, salt, and pepper.
- Heat 2 tablespoons butter in an oven-safe skillet over medium heat. Add the chicken thighs and sear for 2–3 minutes per side, until golden brown. Remove the chicken from the skillet and set aside.
- Using the same skillet, melt 2 tablespoons butter. Add the chopped garlic and cook for 1 minute, stirring occasionally.
- Stir in the flour and cook for 1 minute, stirring constantly.
- Slowly pour in the chicken broth, continuing to stir, and cook for 1 minute until the sauce begins to thicken.
- Add the heavy whipping cream and stir well. Mix in the grated cheese and season with additional salt and pepper if needed.
- Return the chicken thighs to the skillet, spooning the sauce over each piece to coat evenly.
- Transfer the skillet to the oven and bake uncovered for 30–35 minutes, or until the chicken is fully cooked through.
- Garnish with chopped dill and extra cheese if desired. Serve warm and enjoy.

- Can I use bone-in chicken instead of boneless?
You sure can. Bone-in thighs work just fine, they’ll just need a little extra oven time. As always, cook until the chicken is done through (165°F) and you’re good to go.
- Do I really need to sear the chicken first?
Short answer: yes, if you can. Searing adds loads of flavour and gives the chicken that lovely golden colour. If you’re in a rush, you can skip it, but you’ll miss out on some of that magic.
- Can I make the sauce ahead of time?
Absolutely. The sauce can be made a day ahead and kept in the fridge. Just reheat gently on the stove, give it a stir, and continue with the recipe.
- Help! My sauce looks too thin — what went wrong?
Nothing at all. Just let it simmer a little longer on the stove before baking, and remember it thickens more in the oven. Still too thin? Give it a few extra minutes — patience pays off here.
- What should I serve this with?
This sauce is begging to be poured over something. Pasta, rice, mashed potatoes, or even crusty bread are all excellent choices. Add a simple green salad on the side and dinner’s sorted.
