  • Great for leftovers. The flavors become even more delicious the next day.

Step-by-Step Instructions

Step 1: Cook the aromatics
Heat the sun-dried tomato oil in a large Dutch oven or soup pot over medium heat. Add the chopped onion and garlic, then cook for 3–4 minutes until softened and fragrant.

Recommended Pot: A large Dutch oven or heavy-bottomed soup pot is ideal for this one-pot chicken soup. It gives you plenty of room for the broth, pasta, chicken, and vegetables to cook together.

Kitchen Essential: A sharp chef’s knife makes quick work of chopping the onion, garlic, and sun-dried tomatoes for this soup.

Step 2: Build the flavor
Stir in the tomato paste and chopped sun-dried tomatoes. Cook for about 2 minutes, stirring constantly, until the tomato paste deepens in color and becomes fragrant.

Step 3: Add the broth
Pour in the chicken broth, heavy cream, fresh basil, salt, Italian seasoning, garlic powder, and crushed red pepper flakes. Stir well, bring the soup to a gentle boil, then reduce the heat slightly and let it simmer for about 12 minutes so the flavors can develop.

Step 4: Cook the pasta
Add the uncooked shell pasta and reduce the heat to medium-low. Simmer for about 12 minutes, stirring occasionally, until the pasta is tender.

Step 5: Make it creamy
Reduce the heat to low and stir in the chopped spinach, shredded rotisserie chicken, cubed cream cheese, and grated Parmesan cheese. Continue stirring for about 5 minutes, or until the cheeses have melted completely, the spinach has wilted, and the chicken is heated through.

  • Tip: For the smoothest, creamiest soup, grate the Parmesan fresh with a fine cheese grater before adding it to the pot.

Step 6: Finish and serve
Taste and adjust the seasoning if needed. Ladle the soup into bowls and garnish with extra Parmesan, fresh basil, and a sprinkle of crushed red pepper flakes if desired. Serve warm with crusty bread or a fresh green salad.

Kitchen Essential: A deep soup ladle makes it easy to serve this hearty soup without making a mess.

Mistakes to Avoid

A few simple tips will help you get the creamiest, most flavorful soup every time.

  • Don’t boil after adding the cream. Keep the soup at a gentle simmer so the cream stays smooth.
  • Don’t overcook the pasta. It will continue softening as the soup sits.
  • Add the parmesan gradually. Stir it in slowly so it melts evenly into the broth.
  • Use freshly grated parmesan if possible. It melts much better than pre-shredded cheese.

Tip: For the smoothest, creamiest soup, grate the Parmesan fresh with a fine cheese grater before adding it to the pot.

  • Adjust the broth as needed. Pasta absorbs liquid while sitting, so add extra chicken broth when reheating if the soup becomes too thick.

What to Serve With It + Variations

This hearty soup is satisfying on its own, but it’s even better with a few simple sides.

Serve it with:

  • Crusty artisan bread
  • Garlic bread
  • Homemade biscuits
  • Caesar salad
  • Simple green salad

Easy variations:

  • Use rotisserie chicken for an even quicker meal.
  • Swap spinach for kale if you prefer.
  • Add mushrooms for extra heartiness.
  • Stir in red pepper flakes for a little heat.
  • Replace the pasta with cheese tortellini or gnocchi for a fun twist.
  • Add extra chicken broth if you prefer a lighter, brothier soup.

How to Store & Reheat

Got leftovers? Lucky you!

Refrigerate: Store in an airtight container for up to 4 days.

Reheat: Warm on the stovetop over low heat, adding a splash of broth if it thickens too much.

For Leftovers: Store leftover soup in airtight food storage containers to keep it fresh in the refrigerator and make reheating easy.

1. My soup turned out more like pasta than soup. What happened?

Don’t worry! The pasta naturally absorbs a lot of liquid as it cooks and continues absorbing broth as it sits. If you prefer a brothier soup, simply add an extra 1–2 cups of chicken broth during cooking or when reheating. For even better leftovers, you can cook the pasta separately and stir it into individual servings.

2. Should I use more than 32 ounces of chicken broth?

The recipe is designed to be a thick, creamy, hearty soup using 32 ounces (4 cups) of broth. However, if your family prefers a thinner, more traditional soup, feel free to add an extra 2–4 cups of broth. The flavor remains delicious either way!

3. Can I cook the pasta separately?

Absolutely! Many readers love cooking the pasta separately until just al dente and then stirring it into the soup before serving. This helps prevent the pasta from becoming too soft and keeps leftovers from thickening too much in the refrigerator.

4. Can I make this soup ahead of time?

Yes! This soup reheats beautifully and may even taste better the next day as the flavors continue to develop. If making it ahead, consider storing the pasta separately or adding a little extra broth when reheating to maintain the perfect consistency.

5. Can I customize the ingredients?

Definitely! This recipe is very flexible. Not a fan of sun-dried tomatoes? Leave them out. Love fresh herbs? Try adding fresh chopped basil before serving. You can also adjust the spice level by adding more or less crushed red pepper to suit your family’s tastes. Make it your own!

Notes

Pro Tips & Variations

Control the Heat – If you’re sensitive to spice, start with less crushed red pepper and adjust to taste.
Cream Cheese Hack – Room temperature cream cheese melts easier. If it clumps, just press it against the pot’s side to blend.
Switch Up the Pasta – Orecchiette, ditalini, or even orzo work well—just check package instructions for cooking time.

What to Serve With It

This soup is hearty on its own, but if you want a little something extra, try:
Garlic bread – Perfect for soaking up that creamy broth.
Fresh green salad – A light, crisp contrast to the richness.
A glass of white wine – Because why not?

Final Thoughts

Whether you're cooking to impress or just treating yourself, Marry Me Chicken Soup is a recipe that delivers. It’s rich, creamy, and packed with flavor that lingers long after the last spoonful—kind of like love itself.
So, will this soup earn you a proposal? Maybe.
But will it make your taste buds fall head over heels? Absolutely.

  1. Excellent. Can’t wait to make again. I did add one extra cup of water and it was so good that I didn’t have to adjust the seasoning.

    1. Hi Ashley! 😊 I’m so happy you enjoyed the soup! Thank you for sharing your adjustment. Adding an extra cup of water is a great option for anyone who prefers a slightly brothier soup. I’m thrilled it turned out so well for you and that the seasoning was still spot on. Thanks for leaving a comment! ❤️🍲

I’m making this soup tonight and wanted to drop a little tip. If you cook your pasta al dente and chill it in the fridge before adding it, it won’t get mushy in the soup. I usually turn the soup off and stir the pasta in while it’s not boiling. I do this with any pasta soup, and even when I reheat it the next day, the pasta still stays nice and al dente. Bon appétit

    1. Hi Debbie! 😊 Thank you for sharing this fantastic tip! Cooking the pasta al dente and adding it at the end is a great way to keep it from absorbing too much broth, especially if you plan to enjoy leftovers. I’m sure other readers will appreciate this helpful suggestion. Thanks for taking the time to share your experience, and I’m so glad you’re enjoying the soup! ❤️🍲

    1. Hi Samantha! 😊 Thank you for trying the recipe and for the feedback. The pasta will continue to absorb liquid as it cooks and sits, which can make the soup thicker over time. If you’d like a brothier consistency, try adding an extra cup or two of chicken broth, or cook the pasta separately and add it to each serving. I’m glad you enjoyed the flavor! ❤️🍲

    1. Hi Regina! 😊 I love hearing that! There’s nothing better than making a meal the whole family enjoys. I’m so glad both you and your husband loved the soup. Thank you for sharing your experience! ❤️🍲

  3. I absolutely love this! I always follow a recipe to the T when I first make something.
I am making this again and wouldn’t change a thing.

    1. Hi Gina! 😊 What a wonderful compliment—thank you! I’m honored that you followed the recipe exactly and loved the results. It means so much to hear you’ll be making it again. Thanks for taking the time to leave a review! ❤️🍲

Absolutely delicious! Every bite is better than the next. I don’t care for sun-dried tomatoes so I left those out, but still added the tomato paste. We had ours with some slices of buttered baguette and it was heavenly!!

    1. Hi Taylor! 😊 I’m so glad you loved it! The buttered baguette sounds like the perfect side for soaking up that creamy broth. Thank you for sharing your substitution too—it’s helpful for readers who may not be fans of sun-dried tomatoes. So happy it was a hit! ❤️🍲

    1. Hi Heather! 😊 Thank you so much! I’m thrilled you enjoyed it. Thanks for taking the time to leave a review, and happy cooking! ❤️🍲

  5. Simmer the broth for 12 minutes, then add the pasta and cook for 12 minutes? Is this correct? I feel like after the broth comes to a boil then adding the pasta would be correct?

    1. Hi Chris! 😊 Great question. Yes, the instructions are correct. The broth mixture is simmered first to allow all the flavors to blend together before adding the pasta. Once the soup reaches a gentle boil, add the pasta and cook until tender. Just be sure not to boil too vigorously after adding the cream. Hope you enjoy the soup! ❤️🍲

This is a scrumptious hearty soup for cold winter days. The flavor is rich – the sundried tomatoes meld the basil (I suggest fresh chopped basil) seasoning wonderfully. Don’t worry about the calories, this is only one day in your life…you can diet tomorrow 🙂

    1. Hi Carol! 😊 Thank you so much for the wonderful review! I’m thrilled you enjoyed the soup. I love your suggestion of using fresh basil—it adds such a bright, fresh flavor and pairs beautifully with the sun-dried tomatoes. This really is one of those cozy, comforting meals that’s perfect for a chilly day. Thanks for sharing your experience and for the great tip! ❤️🍲

Is it supposed to be 64oz of chicken broth? Because I just made it with 32oz per the recipe and there is zero broth. It’s just a pasta dish.

    1. Hi Miriam! 😊 Thanks for your question. The recipe uses 32 oz (4 cups) of chicken broth, but because the pasta absorbs quite a bit of liquid, the finished soup is meant to be thick, creamy, and hearty. If you prefer a more traditional soup with extra broth, feel free to add another 2–4 cups of chicken broth while cooking or when reheating. I hope that helps! ❤️🍲

  8. Hi Cora! 😊 Thank you so much! I’m thrilled you loved it. Comments like yours make my day. Thanks for giving the recipe a try! ❤️🍲
