Slow Cooker Spinach Artichoke Dip

A warm, creamy spinach and artichoke dip that comes together with very little hands-on work. Everything cooks together in the slow cooker until the cheeses melt into a smooth, savory dip. Serve it straight from the slow cooker with chips, crackers, bread, pretzels, or fresh vegetables.

Ingredients

  • 1 (10-ounce) bag fresh baby spinach, roughly chopped
  • 1 (13-ounce) can quartered artichoke hearts, chopped and drained
  • 1 (8-ounce) brick low-fat cream cheese, cut into 1-inch cubes
  • 1 cup light sour cream or plain Greek yogurt
  • 1 cup shredded Mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup finely-chopped white or red onion
  • 4 cloves garlic, minced
  • 1/2 tsp black pepper
  • 1/4 tsp fine sea salt

Instructions

  • Add everything to the slow cooker. Place all of the ingredients in a small slow cooker and briefly toss them together so they are distributed throughout the pot.
  • Cook until melted. Cover and cook on low for 2–3 hours or on high for 1 hour. The dip is ready for the next step once the cheese has completely melted.
  • Mix and adjust the seasoning. Stir thoroughly until the spinach, artichokes, cheeses, and remaining ingredients form an evenly combined dip. Taste and add salt and pepper as needed.
  • Serve warm. Enjoy immediately with your preferred dippers.

Notes

Recipe Notes

  • Slow cooker size: A small slow cooker, around 3 quarts, works well for this recipe.
  • Watch the cooking time: Slow cookers can vary quite a bit in temperature. Check the dip about every 30 minutes so it doesn’t overcook. Once the cheese is completely melted and the dip is slightly bubbly, it’s ready.
  • Drain the artichokes well: Make sure the artichoke hearts are thoroughly drained before adding them. Extra liquid can make the dip thinner than you want.
  • Cream cheese: Cut the cream cheese into 1-inch cubes as directed. This helps it melt and combine more evenly with the other ingredients.
  • Sour cream or Greek yogurt: Either option works in this recipe. Use whichever you prefer while keeping the amount at 1 cup.
  • Serving: This dip is best served warm. Give it a good stir just before serving and pair it with tortilla chips, crackers, toasted bread, pretzels, or fresh vegetables.
