Slow Cooker BBQ Chicken

This slow cooker BBQ chicken is a straightforward, hands-off meal that produces tender, saucy chicken that can be shredded easily. Serve it on its own, pile it into sandwich buns, or pair it with coleslaw and dill pickle chips.

Ingredients

  • 3 lbs chicken breasts, (boneless, skinless)
  • 1 1/2 cups  BBQ Sauce, I used Sweet Baby Rays Honey BBQ
  • 1/2 medium onion, grated (with juice)
  • 1/2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 2 tbsp brown sugar

Instructions

  • Combine all of the sauce ingredients directly in a 5-6 qt slow cooker and stir until blended.
  • Place the chicken into the slow cooker and turn each piece so it is coated with the sauce. Cover and cook on high for 2 to 3 hours or on low for 6 to 7 hours. Check the chicken sooner when using smaller pieces, preparing a smaller batch, or using a slow cooker that tends to cook quickly. The chicken is ready when it reaches an internal temperature of 165˚F, is fully cooked through, and shreds easily.
  • Transfer the cooked chicken to a cutting board. Use two forks to shred each breast, then return the shredded chicken to the slow cooker. Stir well so the chicken is thoroughly coated in the sauce.

Recipe Notes

  • Chicken: Boneless, skinless chicken breasts work best. If the breasts are smaller or thinner, start checking them earlier so they don’t overcook.
  • BBQ sauce: Since BBQ sauce provides most of the flavor, choose one you already love. Sweet, smoky, or tangy varieties will all give the finished chicken a slightly different taste.
  • Onion: Grate the onion and add the juice along with it. The finely grated onion blends right into the sauce as it cooks.
  • Cooking time: Slow cookers can vary, so use the cooking time as a guide. The chicken is ready when it reaches 165°F internally and shreds easily with two forks.
  • For extra-saucy chicken: Be sure to return the shredded chicken to the slow cooker and stir it thoroughly into the BBQ mixture before serving.
  • Make ahead: You can cook and shred the chicken ahead of time, refrigerate it with the sauce, and reheat it when you’re ready to serve.
  • Leftovers: Store leftover chicken in an airtight container in the refrigerator for 3 to 4 days. Reheat gently, adding a splash of water or broth if it needs a little extra moisture.
