Set the oven to 375°F. In a small bowl, combine the Dijon mustard, parsley, lemon juice, olive oil, garlic, salt, and pepper until well mixed.
Arrange the salmon on a baking sheet lined with parchment paper. Spread the mustard mixture evenly over the top of the salmon.
Place the tray in the oven and bake for 18 to 20 minutes, adjusting for the thickness of the fish. Once cooked, cut into portions and serve right away.
