Rich individual chocolate cakes with set edges and a warm, gooey, molten centre. Made with simple ingredients and ready in 30 minutes, they are pure restaurant-style indulgence at home.
Heat the oven to 400°F (200°C). Grease and flour four 6-ounce ramekins.
Put the chocolate and butter in the top of a double boiler over simmering water. Heat, stirring often and scraping down the sides with a rubber spatula so nothing scorches, until melted, about 5 minutes.
In a large bowl, beat the eggs and sugar with an electric mixer for about 5 minutes, until pale and thick.
Mix in the melted chocolate, flour, cocoa powder and salt until combined. Divide the batter between the ramekins and set them on a baking tray.
Bake for 10 to 13 minutes, until the sides are set but the centres still jiggle.
Let cool for 5 minutes before serving.
