Lasagna Soup

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp ground thyme
  • 2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1 tbsp brown sugar
  • 32 ounce carton chicken broth
  • 2 cans (14.5 ounce) petite diced tomatoes
  • 15 ounce tomato sauce
  • 2 cups broken Mafalda pasta (or lasagna noodles)
  • 1/2 cup freshly grated Parmesan cheese
  • shredded mozzarella cheese or a dollop of ricotta cheese (for topping, optional)

Instructions

  • Place a large pot over the heat. Add the 1 pound ground beef, 1 small onion, diced, and 1 green bell pepper, diced. Cook while breaking the beef into crumbles until it is browned.
  • During the final couple of minutes of cooking, stir in the 3 cloves garlic, minced. Adding the garlic toward the end helps prevent it from burning.
  • Drain away the excess grease from the beef mixture, then return the ground beef mixture to the pot.
  • Add the 1 teaspoon ground thyme, 2 teaspoons Italian seasoning, ½ teaspoon salt, 1 Tablespoon brown sugar, 32 ounce carton chicken broth, 2 (14.5 ounce) cans petite diced tomatoes, and 15 ounce can tomato sauce. Stir everything together thoroughly and bring the mixture to a boil.
  • Lower the heat, cover the pot, and let the soup simmer gently for about 20 minutes.
  • After 20 minutes, stir in the 2 cups broken Mafalda pasta (or lasagna noodles). Continue simmering until the pasta is tender, about 10 or so minutes, stirring occasionally. The pasta can be broken into smaller or larger pieces according to preference.
  • Stir the ½ cup freshly grated Parmesan cheese into the finished soup.
  • Spoon the hot soup into individual bowls. If desired, finish each serving with shredded mozzarella cheese or a dollop of ricotta cheese.

Recipe Notes

  • Pasta: Mafalda pasta gives the soup a fun mini-lasagna look, but broken lasagna noodles work just as well. Keep the amount at 2 cups.
  • Garlic: Add the minced garlic during the last couple of minutes of browning the beef so it has time to become fragrant without burning.
  • Ground beef: Drain any excess grease after browning. If you’re using very lean ground beef, there may not be much grease to remove.
  • Pasta texture: Add the noodles only after the soup has simmered for 20 minutes. Cook for about 10 minutes, stirring occasionally, until tender.
  • Cheese: Stir the ½ cup Parmesan into the soup at the end. Top individual bowls with shredded mozzarella, ricotta, or both if desired.
  • Make ahead: For the best pasta texture, prepare the soup through the 20-minute simmer and refrigerate it without the noodles. When ready to serve, bring it back to a boil, add the pasta, and finish the recipe.
  • Storage: Keep cooled leftovers covered in the refrigerator for up to 4 days. The pasta will absorb more broth as it sits, so the soup will naturally become thicker.
  • Freezing: For the best results, freeze the soup without the pasta or cheese for up to 2–3 months. Thaw overnight in the refrigerator, reheat on the stovetop, and add the pasta as you finish the soup.
