Ingredients
8 bone-in, skin-on chicken thighs (about 4 lbs)
2 Tbsp olive oil
1 Tbsp sesame oil
4 Tbsp low sodium soy sauce
1 Tbsp Worcestershire sauce
2 Tbsp lemon juice (or lime juice)
5 Tbsp maple syrup (or honey)
6 cloves garlic, minced
½ tsp freshly ground black pepper
2 tsp kosher salt (plus additional to taste)
Instructions
In a large mixing bowl or resealable plastic bag, combine all marinade ingredients until well blended. Add the chicken thighs, turning them so each piece is fully coated. Refrigerate and allow the chicken to marinate for at least 30 minutes and up to 2 hours; for best results, marinate overnight.
When ready to cook, set the oven temperature to 450°F.
Transfer the chicken thighs along with all of the marinade into a baking dish, arranging the pieces skin-side up. Roast uncovered for 25–30 minutes, until the chicken reaches an internal temperature of 165°F. About 15–20 minutes into cooking, spoon the pan juices over the chicken to help keep the meat moist and encourage browning.
For extra crisp skin, switch the oven to broil during the final 2–3 minutes of cooking. Watch carefully during this step, as the skin can brown quickly and may burn if left unattended.
