Ingredients
Glaze
1 cup ketchup
¼ cup brown sugar
2 teaspoons cider vinegar
Meatloaf
2 pounds lean ground beef
2 eggs, lightly beaten
½ cup quick cooking oats
⅓ cup milk
⅓ cup ketchup
⅓ cup onion, finely chopped
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon pepper
Instructions
Set the oven to
350ºF. Place a wire rack inside a large baking sheet and cover the rack with aluminum foil. Set aside.
In a small bowl, stir together the ketchup, brown sugar, and cider vinegar to make the glaze. Set the mixture aside.
In a large mixing bowl, combine all of the meatloaf ingredients and mix until everything is evenly incorporated.
Transfer the meat mixture onto the prepared baking sheet and shape it into a 9 × 5 inch loaf. Spread half of the glaze over the top and sides.
Bake for 30 minutes. Remove from the oven and spread the remaining glaze over the loaf.
Return to the oven and bake for another 35–45 minutes, or until an internal thermometer reads 160ºF.
Let the meatloaf rest for 15 minutes before slicing and serving.
