Ingredients

For the crust

  • 14 whole (196 grams) chocolate graham crackers
  • 1 tbsp light brown sugar
  • 7 tbsp (99 grams) unsalted butter, melted

For the filling

  • 8 ounces (227 grams) cream cheese, at room temperature
  • 3/4 cup (94 grams) powdered sugar plus 2 tablespoons, divided
  • 1 cup (270 grams) creamy conventional peanut butter
  • 1 cup (240 grams) heavy whipping cream
  • 1 tsp vanilla extract

For the topping

  • Melted peanut butter
  • Melted chocolate
  • Mini Reese’s cups
  • Peanut butter chips

Instructions

  • Preheat the oven to 325°F.

Prepare the crust

  • Add the chocolate graham crackers and light brown sugar to a food processor. Process until the crackers have become fine crumbs.
  • Pour in the melted butter and pulse until the crumbs are evenly moistened.
  • Transfer the mixture to a 9-inch pie plate. Using the bottom of a measuring cup, glass, or ramekin, firmly press the crumbs across the base and up the sides of the plate.
  • Bake for approximately 10 to 12 minutes, or until the crust smells fragrant. Transfer the pie plate to a wire rack and allow the crust to cool completely.

Make the peanut butter filling

  • Place the softened cream cheese, 3/4 cup powdered sugar, and peanut butter in a large bowl. Using an electric mixer, beat for approximately 3 minutes, until the mixture becomes light and fluffy.
  • In a separate bowl, use an electric mixer fitted with the whisk attachment to whip the heavy cream until it becomes thick and light.
  • Add the remaining 2 tablespoons powdered sugar and the vanilla extract. Continue whipping until the cream forms stiff peaks.
  • Carefully fold the whipped cream into the peanut butter mixture until combined.
  • Spoon the filling into the cooled pie crust and spread it evenly. Freeze for 3 hours, or refrigerate for at least 6 hours.

Decorate and serve

  • Transfer the melted peanut butter and melted chocolate into separate resealable bags or piping bags. Cut a very small opening from the corner or tip of each bag.
  • Gently squeeze the bags to drizzle the peanut butter and chocolate across the surface of the pie. Finish with mini Reese’s cups and peanut butter chips.
  • Serve the pie either frozen or refrigerated.

Recipe Notes

  • Peanut Butter: Conventional creamy peanut butter gives the filling a smooth, consistent texture. Natural peanut butter also works, but stir it extremely well so there are no dry pockets or separated oil.
  • Chocolate Graham Crackers: If you can’t find chocolate graham crackers, Chocolate Teddy Grahams are a good substitute.
  • Cream Cheese: Bring the cream cheese to room temperature before mixing. This makes it easier to blend into a smooth, lump-free filling.
  • Whipped Cream: Whip the heavy cream until stiff peaks form, then gently fold it into the peanut butter mixture. Avoid overmixing so the filling stays light and fluffy.
  • Chilling: Give the pie enough time to set before slicing. Freeze for 3 hours or refrigerate for at least 6 hours.
  • Serving: Serve refrigerated for a softer, creamier filling or frozen for a firmer texture.
  • Storage: Keep the pie covered in the refrigerator for up to 3 days or in the freezer for up to 1 month.
  • Optional Whipped Cream: For an extra creamy topping, whip 1 cup (240 grams) chilled heavy cream with 2 tablespoons (15 grams) powdered sugar and 1 teaspoon vanilla extract until stiff peaks form, then spread over the chilled pie.
