Homemade Apple Fritters

Crisp and golden on the outside, soft and apple-filled in the center, these homemade fritters are finished with a simple vanilla glaze. They come together quickly and are best served fresh, once the glaze has had a few minutes to set.

Servings: 10 fritters

Ingredients

Apple Fritters

  • 1 1/2 cup all purpose flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/3 cup milk
  • 2 eggs
  • 3 tbsp applesauce
  • 2 large Granny Smith apples or Honey Crisp apples peeled cored and diced
  • canola oil or vegetable oil for frying

Glaze

  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 tsp vanilla extract

Instructions

  • In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. Create a well in the center, then add 1/3 cup milk, the eggs, and applesauce. Stir only until the mixture comes together, then fold in the diced apples.
  • Pour 1 1/2 inches of oil into a heavy skillet, Dutch oven, or deep fryer and heat it to 375 degrees. Carefully add about 1/4 cup of batter for each fritter, spreading the batter slightly as it goes into the oil. Fry until golden brown, about 2 minutes per side. Transfer the cooked fritters to paper towels with a slotted spoon and allow the excess oil to drain.
  • Whisk together 1/4 cup milk, the powdered sugar, and vanilla until smooth. Dip each fritter into the glaze, turning it so both sides are coated. Set the glazed fritters on wire racks and allow the excess glaze to drip off while they air dry.

Notes

Recipe Notes

  • Don’t overmix the batter. Stir just until everything comes together to help keep the fritters soft and tender.
  • Keep the oil as close to 375°F as possible. A candy thermometer makes it much easier to monitor the temperature while frying.
  • Fry the fritters in batches and avoid overcrowding the pan. This helps them cook evenly and keeps the oil temperature from dropping too much.
  • A Dutch oven or heavy-bottomed pot works especially well because it holds heat more consistently.
  • The oil temperature will drop when you add the batter and rise again after you remove the fritters. Adjust the heat slightly between batches as needed.
  • Spread each 1/4 cup portion of batter slightly as you drop it into the oil so the center cooks through without the fritter becoming too thick.
  • Transfer the freshly fried fritters to paper towels to drain before adding the glaze.
  • For leftovers, let the fritters cool completely, then loosely wrap them in paper towels and store them in a brown paper bag.
