Ingredients

Salad
  • 2 cups cubed cooked chicken (about 2 lb raw)
  • 4 cups romaine lettuce
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/2 cup sliced almonds
  • 2 Natural Delights® pitted Medjool dates, chopped
  • 2 green onions, chopped
  • Optional sesame seeds, for garnish
Sesame Dressing
  • 2 Natural Delights® pitted Medjool dates
  • 3 tbsp coconut aminos
  • 3 tbsp rice vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tbsp toasted sesame oil
  • 1 garlic clove, peeled
  • 1/2 inch fresh ginger
  • 1/2 tsp ground black pepper
  • 1/4 tsp sea salt

Instructions

  1. Add all dressing ingredients to a blender. Allow the dates to soften while you prepare the salad components.
  2. In a large bowl, combine the chicken, romaine, cabbage, carrots, almonds, chopped dates, and green onions. Do not add sesame seeds yet.
  3. Blend the dressing until completely smooth and creamy.
  4. Drizzle the dressing over the salad and toss until everything is evenly coated.
  5. Finish with sesame seeds if desired, then serve immediately.
