Ingredients

  • 1 ounce ranch dressing mix
  • 1/2 cup breadcrumbs
  • 1/2 cup parmesan cheese (freshly grated)
  • 4 chicken breasts (skinless and boneless)
  • 1/2 cup mayonnaise

Instructions

  • Preheat the oven. Heat the oven to 375°F. Coat a 9×13-inch baking dish with cooking spray.
  • Prepare the coating. Add the ranch dressing mix, breadcrumbs, and parmesan cheese to a shallow plate and combine. Put the mayonnaise on a separate shallow plate.
  • Coat the chicken. Cover each chicken breast with mayonnaise on both sides, then dredge it in the breadcrumb mixture. Arrange the coated chicken breasts in the prepared baking dish.
  • Bake. Place the baking dish in the preheated oven and bake for 40 minutes, or until an instant-read thermometer inserted into the thickest part of the chicken registers 165°F.

  • Chicken: Try to use chicken breasts that are similar in size and thickness so they cook evenly.
  • Breadcrumbs: Regular, seasoned, or Panko breadcrumbs will work. Panko is a great choice if you want a slightly crunchier coating.
  • Mayonnaise: Don’t skip it! It helps the breadcrumb mixture stick to the chicken and keeps the meat moist and juicy as it bakes.
  • Parmesan: Freshly grated Parmesan gives the coating the best cheesy, savory flavor.
  • Check for doneness: Chicken breasts can vary in thickness. Use an instant-read thermometer and make sure the thickest part reaches 165°F.
  • Add more flavor: Feel free to mix chili powder, smoked paprika, jerk seasoning, or another favorite spice into the breadcrumbs.
  • Storage: Keep leftovers in an airtight container in the refrigerator for 3–4 days.
  • Reheating: Bake at 400°F for 5 minutes, or until heated through, to help bring back some of that crispy coating.
  • Freezing: Freeze before or after baking for up to 3 months. Freeze the pieces separately for 1–2 hours first, then transfer them to a freezer-safe container or bag.
