Instructions
Heat the oven to 375°F and spray a 24-count mini muffin tin with cooking spray.
Lightly flour your bench or a cutting board and roll out the crescent dough sheet. If you are using crescent rolls, press the seams together to make one long sheet.
Cut the dough into 24 even squares and press one square into each muffin cup.
Cut the brie into small pieces and tuck a piece into each dough cup.
Spoon a generous dollop of whole cranberry sauce on top of the brie.
Finish each one with a small piece of fresh rosemary.
Bake for about 15 minutes, until the dough is light golden brown. Serve warm.
Notes
Crescent dough: Crescent rolls work fine. Just pinch the perforations together so you have one sheet to cut.
Brie rind: The rind is edible, so there is no need to cut it off. Trim it if you do not like the texture.
Smaller tins: A 12- or 18-count mini muffin tin works too. Bake in batches.
Reheating: Reheat in the oven or air fryer just until warm in the middle. The microwave makes the dough soft.
Freezing: Freeze after baking, well wrapped in a freezer-safe container or bag. Thaw in the fridge, then reheat in the oven or air fryer.
Nutrition: Estimated per bite from the ingredients, without the dusting flour.
