Equipment

  • Medium pot
  • Colander
  • Potato masher or fork

Ingredients

  • 4 russet potatoes 2 to 2 1/2 pounds, peeled and cut into large chunks
  • salt 2 tablespoons for the cooking water, plus more to taste
  • 5-6 tablespoons unsalted butter plus more for serving
  • 3 cups chopped kale, cabbage, chard or other leafy greens lightly packed
  • 3 green onions minced, including the greens (about 1/2 cup)
  • 1 cup milk or cream

Instructions

  • Put the potatoes in a medium pot and cover with cold water by at least an inch. Add 2 tablespoons of salt and bring to a boil. Cook for 15 to 20 minutes, until fork tender, then drain in a colander.
  • Put the empty pot back over medium-high heat and melt the butter. When it is hot, add the greens and cook for 3 to 4 minutes, until wilted and they have released some of their liquid. Add the green onions and cook for 1 minute more.
  • Pour in the milk or cream, stir, and add the potatoes back to the pot. Turn the heat down to medium.
  • Mash the potatoes into the greens with a fork or potato masher. Season with salt to taste and serve hot with a knob of butter in the middle.
