Ingredients

  • 1-1/2 cups cooked rice
  • 1/4 cup raisins
  • 2 large eggs
  • 1-1/2 cups whole milk
  • 1/2 cup sugar
  • 1/2 teaspoon ground nutmeg
  • Additional milk, optional

Instructions 

  1. Lightly grease a 1-quart casserole dish, then spread the cooked rice and raisins evenly inside.
  2. In a separate small bowl, whisk together the eggs, whole milk, sugar, and nutmeg until smooth.
  3. Pour this mixture over the rice.
  4. Bake uncovered at 375°F for 45–50 minutes, or until the center is set and a knife inserted into it comes out clean.
  5. Allow the pudding to cool. If you like a creamier serving, drizzle a little extra milk on top.
  6. Store any leftovers in the refrigerator.
