Prepare the seasoning and chicken Preheat the oven to 425°F (220°C). Take the chicken thighs out of the refrigerator and let them sit until they lose their chill. Pat them dry thoroughly with paper towels. In a small bowl, combine all the herbs and spices until evenly mixed.
