Bread

  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (1 stick), softened
  • 2/3 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup milk

Apple Filling

  • 2 cups apples, peeled, cored, and chopped
  • 1 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar

Glaze

  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F. Grease an 8.5 × 4.5 × 2.5-inch loaf pan with non-stick cooking spray.
  2. In a small bowl, whisk together the brown sugar and 1 teaspoon ground cinnamon. Set the mixture aside.
  3. In a large mixing bowl, beat the butter and 2/3 cup granulated sugar with an electric mixer until the mixture is light and fluffy. Add the eggs and vanilla extract, mixing just until incorporated.
  4. In another small bowl, whisk together the flour and baking powder. Stir the dry ingredients into the butter mixture until combined, then add the milk and mix until the batter is smooth.
  5. Spread half of the batter evenly into the prepared loaf pan.
  6. In a small bowl, combine the apples, 1 teaspoon cinnamon, and 1 tablespoon granulated sugar. Scatter half of the apple mixture over the batter. Spoon the remaining batter on top, then finish with the remaining apples, gently pressing them into the surface.
  7. Evenly sprinkle the reserved brown sugar and cinnamon mixture over the top.
  8. Bake for 1 hour, or until a toothpick inserted into the center comes out clean. Let the loaf cool in the pan for about 30 minutes.
  9. Stir together the powdered sugar and milk until the glaze is smooth. Drizzle it over the cooled loaf.
  10. Slice and serve.
