Sliders

  • 2 tablespoons unsalted butter, softened
  • 1 (12-count) package Hawaiian sweet dinner rolls (see Note 1)
  • 1 pound deli roast beef (see Note 2)
  • 12 slices provolone cheese, divided
  • 1½ cups crispy fried onions (optional)

Butter Topping

  • 8 tablespoons unsalted butter
  • 1 packet au jus gravy mix, divided
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon sesame seeds
  • 3/4 teaspoon dried minced garlic
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat the oven to 350°F (175°C). Spread the softened butter over the bottom of a 9 x 13-inch baking pan, then line the pan with parchment paper.
  2. Using a serrated knife, carefully slice the entire package of Hawaiian rolls in half horizontally, leaving the rolls connected. Place the bottom half into the prepared baking pan.
  3. Arrange 6 slices of provolone over the rolls. Top with the roast beef, followed by the crispy fried onions if using. Add the remaining 6 slices of provolone, then place the top half of the rolls over the filling.
  4. Melt the butter in a small microwave-safe bowl. Stir in 1 tablespoon of the au jus mix, Worcestershire sauce, sesame seeds, dried minced garlic, and onion powder until fully combined. Spoon or brush about three-quarters of the mixture over the tops and sides of the rolls. Reserve the remaining butter mixture in the refrigerator for another use, such as seasoning bread or steak.
  5. Bake the sliders uncovered for 15–20 minutes, or until the cheese has melted completely and the tops of the rolls are lightly golden.
  6. Meanwhile, prepare the au jus. In a small saucepan set over medium heat, combine the remaining au jus mix with the amount of cold water directed on the package. Whisk well, bring to a boil, then reduce to a simmer and cook until slightly thickened.
  7. Remove the sliders from the oven and cut them into individual portions following the roll seams with a sharp knife. Serve immediately with the warm au jus on the side for dipping.

Recipe Notes

Note 1:
Keep the dinner rolls attached as one sheet when slicing them horizontally. This helps make assembly quicker and keeps the sliders neatly together while baking.
Note 2:
Ask the deli for rare roast beef if possible. Since it will continue cooking in the oven, starting with rare meat helps keep it tender and juicy.

Storage

  • Refrigerator: Store leftover sliders in an airtight container for up to 3 days.
  • Freezer: Freeze in a freezer-safe container for up to 1 month.
  • To Reheat: Cover with foil and warm in a 350°F oven for about 10 minutes to help prevent the sliders from drying out.
