The Best Baked Ziti Casserole

Easy Classic Baked Ziti Recipe

Baked ziti has always been one of those dinners that everyone gets excited about. It’s warm, cheesy, packed with a hearty meat sauce, and baked until the cheese is perfectly melted and bubbly.

Just like lasagna, it’s the kind of comforting meal that brings everyone to the table, but it’s much easier to make.

This is one of my favorite pasta dinners because it comes together with simple ingredients and is perfect for busy weeknights, family gatherings, or sharing with friends.

The creamy ricotta filling, rich tomato sauce, and layers of mozzarella create the perfect bite every time.

Pair it with garlic bread and a fresh salad for an easy dinner everyone will love.

Why You’ll Love This Recipe

  • Easy to make. All the classic flavors of lasagna with much less work.
  • Perfectly cheesy. Every layer is filled with creamy ricotta, melty mozzarella, and parmesan.
  • Great for feeding a crowd. This recipe makes enough for family dinners, potlucks, and holidays.
  • Make-ahead friendly. Assemble it in advance and bake when you’re ready to serve.
  • Freezer friendly. Make an extra pan now and save one for another busy night.
  • Classic comfort food. Rich, hearty, and guaranteed to become a family favorite.

For the Baked Ziti

  • Ziti Pasta – The classic choice for this recipe because its tube shape holds onto the meat sauce and melted cheese. Penne or rigatoni also work well if that’s what you have on hand.
  • Ground Beef – Creates a hearty, flavorful sauce. You can also use ground sausage for a richer taste or substitute a combination of both.
  • Marinara Sauce – A good-quality store-bought marinara keeps this recipe quick and easy, but homemade marinara works just as well.
  • Diced Tomatoes – Adds extra texture and fresh tomato flavor to the sauce. Be sure to include the juices for the best consistency.
  • Garlic Powder – Gives the meat sauce a savory garlic flavor without the extra prep. Fresh minced garlic can be substituted if preferred.
  • Italian Seasoning – A simple blend of herbs that adds classic Italian flavor to the sauce.
  • Fresh Mozzarella – Melts into creamy pockets throughout the casserole, making every bite extra cheesy.
  • Shredded Mozzarella Cheese – Creates the golden, bubbly cheese topping everyone loves.
  • Parmesan Cheese – Adds a salty, nutty finish that balances the richness of the mozzarella.
  • Salt and Pepper – Season to taste to bring all of the flavors together.

For the Ricotta Cheese Mixture

  • Ricotta Cheese – The creamy filling that gives baked ziti its signature rich texture.
  • Shredded Mozzarella Cheese – Blends into the ricotta for even more cheesy goodness.
  • Parmesan Cheese – Adds extra flavor and a hint of sharpness to the filling.
  • Fresh Parsley – Brings a pop of fresh flavor and color to the cheese mixture.
  • Fresh Basil – Adds a light, aromatic touch that pairs perfectly with the tomato sauce.
  • Garlic Clove – Fresh grated garlic gives the ricotta mixture a boost of flavor.
  • Egg – Helps bind the cheese mixture together so it stays creamy while baking.
  • Salt and Pepper – A simple seasoning that enhances the flavor of the cheese filling.

How to Make Classic Baked Ziti

Step 1: Brown the Meat

Start by preheating your oven to 375°F. While the oven heats, cook the ground beef (or sausage) in a large pot over medium heat until it’s completely browned. Drain any excess grease, then season the meat with the garlic powder, Italian seasoning, salt, and pepper.

Step 2: Make the Meat Sauce

Stir the marinara sauce and undrained diced tomatoes into the browned meat. Cover the pot and let the sauce simmer for about 15 minutes so the flavors have time to come together. Before moving on, taste the sauce and adjust the seasoning if needed. Reserve 2 cups of the sauce for layering later.

Step 3: Cook the Pasta

While the sauce simmers, cook the ziti in a large pot of salted boiling water until it’s just al dente. Since the pasta will continue cooking in the oven, slightly undercooking it helps prevent it from becoming too soft. Drain the pasta well.

Step 4: Prepare the Ricotta Filling

In a large mixing bowl, combine the ricotta cheese, shredded mozzarella, parmesan, egg, parsley, basil, and grated garlic. Stir until everything is evenly mixed, then season with salt and pepper. The egg helps bind the cheese mixture so it stays creamy while baking.

Step 5: Combine the Pasta and Sauce

Add the cooked ziti to the meat sauce and gently stir until every piece of pasta is coated. This ensures each bite is packed with flavor.

Step 6: Assemble the Layers

Spread half of the pasta mixture into a 9×13-inch baking dish. Spoon dollops of the ricotta mixture over the pasta, then scatter the fresh mozzarella on top. Pour the reserved meat sauce over this layer before adding the remaining pasta. Finish with the rest of the ricotta mixture, followed by the shredded mozzarella and parmesan cheese.

Step 7: Bake Until Hot and Bubbly

Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and continue baking for another 10 minutes, allowing the cheese to melt and turn lightly golden.

Step 8: Broil and Serve

For an extra golden, bubbly cheese topping, place the baked ziti under the broiler for 1 to 2 minutes, watching closely so it doesn’t burn. Let the casserole rest for about 5 to 10 minutes before serving. Garnish with fresh basil or parsley, if desired, and enjoy every cheesy bite.

Make Ahead + Freezing

To make in advance:

Assemble the entire casserole up to one day ahead, then cover tightly with plastic wrap or foil and refrigerate. When you’re ready to bake, remove it from the refrigerator while the oven preheats and add a few extra minutes to the baking time if needed.

To freeze:

Baked ziti freezes beautifully before or after baking. Wrap the dish tightly with plastic wrap and aluminum foil, then freeze for up to 3 months. Thaw overnight in the refrigerator before baking or reheating until hot and bubbly.

Notes

Ingredients

Main Ingredients

  • 1 lb ziti pasta
  • 1 lb ground beef, or ground sausage
  • 28 ounces marinara sauce, or store-bought
  • 2 cups canned diced tomatoes, don't drain
  • 2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 4 ounces fresh mozzarella cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup parmesan cheese
  • Salt and pepper to taste

Ricotta Cheese Mixture

  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp parmesan cheese
  • 1 tbsp fresh parsley, finely minced
  • 1 tsp fresh basil, finely minced
  • 1 garlic clove, grated
  • 1 egg
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F.
  2. Place the ground beef in a large pot and cook until fully browned. Season with the garlic powder, Italian seasoning, salt, and pepper.
  3. Stir in the marinara sauce, diced tomatoes, and red pepper flakes. Cover the pot and let the sauce simmer for 15 minutes. After simmering, taste and adjust the seasoning if needed, then set aside 2 cups of the sauce for later.
  4. While the sauce is cooking, prepare the ziti in a large pot of boiling salted water until it reaches an al dente texture.
  5. In a large mixing bowl, combine the ricotta cheese, mozzarella cheese, parmesan cheese, egg, parsley, basil, and grated garlic. Stir until evenly blended, then season with salt and pepper to taste.
  6. Fold the cooked pasta into the meat sauce until well coated. Transfer half of the pasta mixture into a 9×13 baking dish. Spoon dollops of the ricotta mixture over the pasta, then add pieces of the fresh mozzarella cheese.
  7. Spread the reserved 2 cups of meat sauce over the first layer. Top with the remaining pasta mixture, then finish with the rest of the ricotta mixture. Sprinkle the shredded mozzarella cheese and parmesan cheese evenly over the top.
  8. Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and continue baking for another 10 minutes. Finish under the broiler for 1–2 minutes until the cheese is lightly browned. Garnish with fresh basil or parsley if desired before serving.

Recipe Tips

  • Preparing the meat sauce ahead of time allows the flavors to develop even more. The assembled casserole can also be refrigerated for several hours before baking; simply keep it covered until you're ready to cook.
  • For extra vegetables, mix chopped fresh spinach into the ricotta filling or add diced carrots and mushrooms to the meat sauce.
  • Lightly coat the underside of the aluminum foil with nonstick cooking spray to help prevent the melted cheese from sticking.
  • To keep the pasta from becoming overly soft after baking, cook it just shy of al dente. For example, if the package recommends 10 minutes, boil it for about 8–9 minutes instead.

1. Can I make baked ziti ahead of time?

Yes! This is one of my favorite make-ahead dinners. Simply assemble the baked ziti, cover it tightly, and refrigerate it for up to 24 hours before baking. If you’re baking it straight from the fridge, just add about 10 to 15 extra minutes to the baking time.

2. Why did my baked ziti come out watery?

This usually happens if the pasta is overcooked or the sauce is a little too thin. Cook the pasta just until al dente, let the sauce simmer until slightly thickened, and allow the baked ziti to rest for 5 to 10 minutes before serving so everything has time to set.

3. Can I use a different type of pasta?

Absolutely! While ziti is the traditional choice, penne or rigatoni work just as well. I like using short pasta with ridges because it holds onto the sauce and melted cheese beautifully.

4. Do I have to use ricotta cheese?

Ricotta gives baked ziti its classic creamy texture, but you can substitute cottage cheese if that’s what you have on hand. Just make sure it’s well drained so the filling stays nice and creamy.

5. How do I know when baked ziti is done?

The baked ziti is ready when it’s hot all the way through, the sauce is bubbling around the edges, and the cheese on top is completely melted with a few golden brown spots. Let it rest for a few minutes before serving so it’s easier to slice.
