These garlic butter steak bites have become one of my favorite quick dinners. Instead of cooking a whole steak, the meat is cut into bite-sized cubes that cook in just a few minutes.

Each piece develops a beautiful sear on the outside while staying juicy and tender inside. At the end, everything is tossed in a simple garlic butter sauce that coats every bite.

The best part is how quickly the dish comes together. In about 20 minutes, you can have a skillet full of flavorful steak bites ready to serve.

They’re perfect for an easy weeknight dinner, but they also work great as a shareable appetizer. Just sprinkle fresh parsley on top and serve them straight from the pan.

  • Sirloin Steak – The main star of this recipe. Sirloin is tender and flavorful, but you can also use ribeye, strip steak, or any well-marbled cut for juicy results.
  • Salt & Pepper – Simple seasoning that enhances the natural flavor of the steak and helps create a delicious crust when seared.
  • Olive Oil – Used to heat the skillet and help the steak develop a beautiful golden sear without sticking.
  • Butter – Adds rich flavor and forms the base of the garlic butter sauce that coats the steak bites.

How To Make The Perfect Garlic Butter Steak Bites

Ingredients

  • 1.5 pounds sirloin steak (or use ribeye, strip steak, or another tender well marbled cut)
  • Salt & pepper to taste
  • 1 tablespoon olive oil
  • 4 tablespoons butter (1/2 stick), divided
  • 4–5 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Remove the steak from the refrigerator about 30 minutes before cooking so it can come closer to room temperature.
  2. Slice the steak into 1-inch cubes, then season generously with salt and pepper.
  3. Place a skillet over medium-high heat and add the olive oil along with 1 tablespoon of the butter. Allow the pan to heat for a few minutes.
  4. Arrange the steak pieces in one layer in the pan. Avoid overcrowding—cook the meat in two batches if necessary. Let the steak cook undisturbed for about 2 minutes, then flip and cook for another 2 minutes for a medium doneness. Repeat with the remaining steak.
    • Do not stir the steak while it cooks; leaving it in place helps develop a good sear.
    • When each batch is finished, move it to a plate. If needed, cut into one piece to check doneness before cooking the rest.
  5. Lower the heat to medium-low. Add the remaining butter and the minced garlic to the same skillet. Cook while stirring frequently for 1–2 minutes, just until the garlic is cooked but not browned.
  6. Remove the pan from the heat and return the steak to the skillet along with any juices from the plate. Toss the steak in the garlic butter sauce until coated.
  7. Serve right away and sprinkle the fresh parsley on top.

  • This recipe can serve 4–6 people as an appetizer or 2–4 people as a main dish, depending on the side dishes served with it.
  • Avoid overcooking the steak, as it can become tough and dry.
  • A cast iron skillet works especially well for getting a good sear on the steak.

1. What’s the best steak to use for steak bites?

Sirloin is my go-to because it’s tender, flavorful, and reasonably priced. But this recipe works just as well with ribeye, New York strip, or tenderloin if you’re feeling fancy. The key thing to look for is good marbling, because that keeps the steak juicy when cooked quickly in a hot pan.

2. How do you get that nice golden crust on the steak?

Two things: a hot pan and patience. Make sure your skillet is properly heated before adding the steak, then place the pieces in a single layer and don’t move them for a couple of minutes. This lets the outside develop a beautiful brown crust instead of steaming.

3. Do I really need to cook the steak in batches?

Yes, and it’s worth it. If the pan is overcrowded, the steak releases moisture and starts to steam instead of sear. Cooking in two batches gives you those flavorful, caramelized edges that make steak bites so good.

4. When should the garlic go into the pan?

Right at the end. Garlic cooks very quickly and can burn if it sits in a hot pan too long. Once the steak is done, lower the heat, add the butter and garlic, and cook it just until fragrant and lightly golden.

5. Can I make steak bites ahead of time?

They’re definitely best straight out of the skillet when the steak is juicy and the garlic butter sauce is glossy. If you want to get ahead, you can cut and season the steak earlier in the day, then cook it just before serving.
