  • The slow cooker does almost all the work. Add the ingredients, let them cook low and slow, and finish with cream and puff pastry for an easy homemade dinner.
  • Rich, creamy, and wonderfully comforting. Every spoonful is thick, velvety, and packed with cozy flavors that are perfect for cooler weather.
  • A complete meal in one bowl. With chicken, potatoes, vegetables, and a flaky pastry topping, it’s hearty enough to serve on its own.
  • Great for family dinners. This recipe makes generous servings and is always a crowd-pleaser, whether you’re feeding kids or adults.
  • Perfect for meal prep. Make a batch at the beginning of the week and enjoy warm, comforting leftovers whenever you need an easy lunch or dinner.

For the Soup

  • Chicken Breasts – Boneless, skinless chicken breasts become tender and easy to shred after slow cooking. You can also use boneless chicken thighs if you prefer richer, darker meat.
  • Salt and Pepper – A simple seasoning that enhances the flavor of the chicken and brings balance to the creamy broth.
  • Onion – Diced onion adds a naturally sweet, savory base that gives the soup plenty of depth.
  • Garlic – Fresh minced garlic adds rich flavor and pairs perfectly with the herbs.
  • Fresh Rosemary and Thyme – These herbs give the soup its classic chicken pot pie flavor. If fresh herbs aren’t available, a small pinch of dried herbs works just as well.
  • Chicken Broth – Forms the flavorful base of the soup while keeping it light enough for the cream to shine.
  • Russet Potato – As it cooks, the potato becomes soft and hearty, helping make the soup filling and comforting.
  • Frozen Peas and Carrots – A convenient shortcut that adds color, sweetness, and the classic vegetables found in traditional chicken pot pie.

For the Creamy Finish

  • Flour – Mixed with the cream to help thicken the soup into a smooth, velvety consistency.
  • Heavy Cream – Gives the broth its rich, creamy texture and creates that signature chicken pot pie filling taste.
  • Cornstarch – An optional thickener if you prefer an extra-rich soup with a gravy-like consistency.
  • Fresh Parsley – Stirred in just before serving for a pop of fresh flavor and color.

For Serving

  • Puff Pastry – Baked until golden and flaky, it’s the perfect finishing touch that transforms this soup into a true chicken pot pie experience. Cut it into any shape you like for a fun, homemade presentation.

Step-by-Step Instructions

Step 1: Add Everything to the Slow Cooker

Place the chicken breasts, diced onion, minced garlic, rosemary, thyme, chicken broth, diced potato, frozen peas and carrots, and a generous pinch of salt and pepper into your slow cooker. Cover and cook on High for 3 hours, or until the chicken is fully cooked and the potatoes are tender.

Step 2: Shred the Chicken

Transfer the cooked chicken to a cutting board and shred it using two forks. Return the shredded chicken to the slow cooker, then remove and discard the rosemary and thyme sprigs.

Step 3: Make the Soup Creamy

In a small bowl, whisk together the flour and heavy cream until completely smooth. Stir the mixture into the soup and continue cooking on High for about 1 more hour.

Step 4: Thicken if Needed

If you prefer a thicker, pot pie-style filling, whisk the cornstarch with a little cold water to make a slurry. Stir it into the hot soup and let it cook for a few minutes until the broth thickens.

Step 5: Bake the Puff Pastry

While the soup finishes cooking, cut the thawed puff pastry into your favorite shapes, such as squares, triangles, or circles. Bake according to the package directions (about 375°F for 10–15 minutes) until golden brown and flaky.

Step 6: Garnish and Serve

Stir the chopped parsley into the finished soup for a burst of fresh flavor and color. Ladle the soup into bowls, top each serving with a piece of warm puff pastry, and serve immediately while hot.

Notes

Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper
  • Half an onion, diced
  • 2–3 cloves garlic, minced
  • A sprig of fresh rosemary (sub a small pinch of dried herbs)
  • A sprig of fresh thyme (sub a small pinch of dried herbs)
  • 32 oz chicken broth
  • 1 large russet potato, peeled and diced
  • 1 package frozen peas and carrots (2–3 cups)
  • 2 tablespoons flour
  • 1 cup heavy cream
  • 3 tablespoons cornstarch
  • Fresh chopped parsley
  • 1 thawed sheet of puff pastry

Instructions

1. Cook the Soup

Add the chicken breasts, salt, pepper, diced onion, garlic, rosemary, thyme, chicken broth, diced potato, and frozen peas and carrots to your slow cooker. Cover and cook on High for about 3 hours.
Once the chicken is fully cooked, transfer it to a cutting board, shred it with two forks, and return it to the slow cooker. Remove and discard the rosemary and thyme sprigs.

2. Add the Cream

Whisk together the flour and heavy cream until completely smooth. Stir the mixture into the soup, then continue cooking on High for approximately 1 additional hour.
If you'd like a thicker consistency, combine the cornstarch with a small amount of cold water until smooth, then stir it into the hot soup while it continues to cook.

3. Bake the Puff Pastry

Slice the thawed puff pastry into your preferred shapes, such as triangles, circles, or hearts. Bake according to the package directions (we baked ours at 375°F for 10–15 minutes) until golden and flaky.

4. Finish and Serve

Mix the chopped parsley into the soup just before serving for a fresh burst of color and flavor. Ladle the soup into bowls and top each serving with a baked puff pastry piece. Enjoy while warm.

Notes

  • For brighter-looking vegetables, replace the frozen carrots with freshly chopped carrots at the beginning of cooking and stir in the frozen peas near the end.
  • Slightly warming the heavy cream before adding it to the slow cooker helps the cornstarch thicken the soup more effectively.
  • The cornstarch is optional. You can leave it out if you prefer, but using it creates a rich, thick texture similar to the filling of a traditional chicken pot pie.

1. Can I use chicken thighs instead of chicken breasts?

Absolutely. Chicken thighs work really well in this soup and will give you a slightly richer, more tender result. Chicken breasts are great if you prefer a leaner option, but both work beautifully here.

2. Can I make this soup without a slow cooker?

Yes! You can make it on the stovetop instead. Simply simmer the chicken, vegetables, herbs, and broth in a large pot until the chicken is cooked and the potatoes are tender. Then continue with the cream and thickening steps as written.

3. How do I make this soup extra thick and creamy?

For that classic chicken pot pie filling texture, add the cornstarch slurry at the end of cooking. You can also let the soup simmer uncovered for a little longer to naturally thicken.

4. Can I use fresh vegetables instead of frozen peas and carrots?

Of course. Fresh carrots, peas, corn, green beans, or other vegetables can be added depending on what you have on hand. Just keep in mind that firmer vegetables may need more cooking time.

5. Can I prepare this recipe ahead of time?

Yes, this soup is perfect for making ahead. Store it in the fridge for up to a few days and gently reheat before serving. For the best texture, bake the puff pastry fresh and add it right before serving so it stays crisp and flaky.
