Quick & Flavor-Packed Chicken Stir-Fry

Fast, Fresh & Packed with Flavor – Your New Go-To Chicken Stir-Fry!

Chicken stir-fry is one of those dinners I come back to whenever I need something quick, fresh, and satisfying.
In about 30 minutes, tender chicken, crisp vegetables, and a flavorful homemade sauce come together in one pan for a meal that’s even better than takeout.

What I love most about this recipe is how simple it is to make with everyday ingredients.
Serve it over rice or noodles for an easy weeknight dinner, or make a batch ahead for lunches throughout the week—it reheats beautifully and never disappoints.

For the Stir-Fry Sauce

  • Chicken Broth – Forms the base of the sauce and helps create a light, flavorful coating without making it too heavy.
  • Tamari Soy Sauce (or Coconut Aminos) – Adds the savory, umami flavor that gives the sauce its classic stir-fry taste. Use low-sodium tamari if you prefer a less salty dish.
  • Honey – Brings a touch of natural sweetness that balances the salty and savory ingredients.
  • Sesame Oil – A small amount goes a long way, adding a warm, nutty aroma that’s a signature flavor in many stir-fries.
  • Rice Vinegar (or Apple Cider Vinegar) – Adds a hint of acidity to brighten the sauce and balance the sweetness.
  • Cornstarch (or Arrowroot Powder) – Thickens the sauce so it clings perfectly to the chicken and vegetables.

For the Stir-Fry

  • Avocado Oil – A great choice for stir-frying because of its high smoke point and mild flavor.
  • Boneless, Skinless Chicken Breast – Lean, tender, and quick-cooking, making it perfect for a fast weeknight meal. Chicken thighs can also be used if you prefer darker meat.
  • Salt & Pepper – Simple seasonings that enhance the natural flavor of the chicken.
  • Red Bell Pepper – Adds sweetness, vibrant color, and a satisfying crunch.
  • Carrot – Brings natural sweetness and a crisp texture that holds up well during stir-frying.
  • Broccoli Florets – A classic stir-fry vegetable that adds freshness, color, and plenty of texture.
  • Yellow Onion – Becomes slightly sweet as it cooks and adds a flavorful base to the dish.
  • Fresh Ginger – Gives the stir-fry its warm, slightly spicy flavor and pairs perfectly with the garlic.
  • Garlic – Adds bold, savory flavor and makes the sauce even more aromatic.

For the Garnish

  • Sesame Seeds – Sprinkle over the finished dish for a light crunch and a subtle nutty flavor.
  • Green Onion – Adds a fresh pop of color and a mild onion flavor that perfectly finishes the stir-fry.

Ingredients

For the Stir-Fry Sauce:

  • ¼ cup chicken broth
  • ¼ cup tamari soy sauce (or coconut aminos)
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp rice vinegar (or apple cider vinegar)
  • 1 tbsp cornstarch (or arrowroot powder)

For the Stir-Fry:

  • 2 tbsp avocado oil
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • Salt & pepper, to taste
  • 1 red bell pepper, deseeded & chopped
  • 1 small carrot, thinly sliced
  • 2 cups broccoli florets
  • 1 small yellow onion, chopped
  • 1 tbsp freshly grated ginger
  • 4 garlic cloves, minced

For Garnish (Optional, but Recommended!):

  • 1 tbsp sesame seeds
  • 1 green onion, sliced

Instructions

Mix Up the Sauce

  • In a small bowl, whisk together all the sauce ingredients: chicken broth, tamari, honey, sesame oil, vinegar, and cornstarch. Set it aside for later.

Cook the Chicken

  • Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer, season with salt and pepper, and let it brown for 4–5 minutes, stirring occasionally. Once cooked, remove it from the pan and set aside.

Stir-Fry the Veggies

  • Using the same pan, add another 1 tablespoon of oil and toss in the red bell pepper, onion, carrot, and broccoli. Stir-fry until the veggies are just tender, about 3–4 minutes.

Bring It All Together

  • Add the chicken back into the pan, along with the minced garlic and grated ginger. Stir for 30 seconds until fragrant. Pour in the prepared sauce and cook for another 1–2 minutes, stirring until the sauce thickens and coats everything beautifully.

Serve & Enjoy

  • Sprinkle with sesame seeds and sliced green onion, then serve hot over rice, noodles, or enjoy it as is!

Notes

Storage & Meal Prep Tips

  • Refrigerate: Let it cool completely before transferring to an airtight container. It keeps well for 4–5 days.
  • Freeze: Store in an airtight container for up to 3 months—rice included!
  • Tip: Use low-sodium tamari soy sauce to keep the flavors balanced without being too salty.
And there you have it—a foolproof, flavor-packed chicken stir-fry that’s simple enough for a weeknight but impressive enough to serve to guests. Give it a try and let me know what you think!

1. Can I use chicken thighs instead of chicken breast?

Absolutely! Chicken thighs work beautifully in this recipe and stay extra juicy while cooking. I usually use chicken breast because it’s lean and cooks quickly, but if you’re a fan of dark meat, thighs are every bit as delicious. Just cut them into bite-sized pieces and cook as directed.

2. Can I make this chicken stir-fry ahead of time?

Yes! This is one of those recipes that’s just as good the next day. Store leftovers in an airtight container in the refrigerator for up to 4–5 days, then reheat in the microwave or in a skillet over medium heat until warmed through. It’s a great meal prep option for busy weeks.

3. Why didn’t my stir-fry sauce thicken?

The most common reason is that the cornstarch settled to the bottom of the bowl before you added it to the pan. Give the sauce a quick whisk right before pouring it in, then let it simmer for a minute or two. As it heats, it’ll thicken into a glossy sauce that coats the chicken and vegetables perfectly.

4. Can I add different vegetables?

Definitely! That’s one of the best things about stir-fries—you can use whatever’s in your fridge. Snap peas, mushrooms, zucchini, baby corn, cabbage, bok choy, and snow peas are all great choices. Just add firmer vegetables first, then toss in the more delicate ones toward the end so everything finishes cooking at the same time.

5. What’s the secret to a great chicken stir-fry?

Have everything prepped before you turn on the heat. Stir-frying happens fast, so chop the vegetables, cut the chicken, and mix the sauce ahead of time. Once the pan is hot, the whole recipe comes together in minutes, and you’ll end up with tender chicken, crisp vegetables, and a sauce that clings to every bite.
