Ready to dig in? Let’s get cooking!

Why You’ll Love This Recipe

There are plenty of reasons to love a good casserole, but this one has a few things going for it.

It’s ridiculously easy. There’s no complicated cooking here. Mix, assemble, bake. That’s about it.

It’s perfect for leftover chicken. Have some cooked chicken hanging around in the fridge? Great. Shred or chop it up and put it to work.

It’s creamy and cheesy. The cream of chicken soup and sour cream make the filling wonderfully creamy, while that Mexican blend cheese melts right over the top.

It’s hearty. You’ve got chicken, rice, black beans, and corn all in one dish, so you don’t need to make a whole spread of side dishes to go with it.

And it’s make-ahead friendly. This is one of those dinners you can assemble ahead of time when you know tomorrow is going to be one of those days.

For Chicken Burrito Casserole

  • Chicken – I use about 3 cups of cooked chicken (either chopped or shredded). You can use chicken breasts or a rotisserie chicken.
  • Instant Rice – This recipe uses 2 cups of instant rice for a quick and easy base.
  • Cream of Chicken Soup – Two 10.5 oz cans create a creamy texture that binds everything together.
  • Sour Cream – Adds a rich and creamy tanginess to the casserole.
  • Canned Corn – One 15.25 oz can of drained corn for sweetness and crunch.
  • Canned Black Beans – One 15 oz can, drained and rinsed. These add protein and fiber to the dish.
  • Rotel – A 10 oz can of diced tomatoes with green chilies for a bit of spice and flavor.
  • Chicken Broth – 2 cups to help bind the ingredients and create a nice saucy texture.
  • Taco Seasoning – 3 tablespoons to add that classic Tex-Mex flavor.
  • Mexican Blend Cheese – 1 cup of shredded cheese to top off the casserole for a gooey, cheesy finish.

For Toppings (Optional)

  • Chopped Cilantro – Adds a fresh and vibrant garnish.
  • Crushed Tortilla Chips – For a little crunch on top.
  • Sour Cream – A dollop on top can add extra creaminess.
  • Guacamole – Perfect for adding a bit of zest and creaminess.

Step-by-Step Instructions

First, preheat the oven.

Get the oven going at 350°F (175°C). That way, it’s ready to go when your casserole is assembled.

Make the creamy sauce.

Grab a large bowl and mix together the cream of chicken soup, sour cream, and taco seasoning.

Then stir in the chicken broth until everything is nice and smooth. You don’t want big pockets of seasoning or soup hanging around in there.

Add the good stuff.

Now add the cooked chicken, instant rice, ROTEL, corn, and black beans.

Give everything a really good stir until the ingredients are evenly mixed and coated in that creamy sauce.

That’s basically the hard part. See? I told you this was easy!

Get it into the baking dish.

Transfer the mixture to a greased 9×13-inch baking dish and spread it out evenly.

Then sprinkle the shredded Mexican blend cheese all over the top.

And yes, don’t be shy with that cheese.

Bake until bubbly.

Cover the casserole with foil and bake for 40 minutes.

Then remove the foil and let it bake for another 10–15 minutes, or until the casserole is bubbly and cooked through.

Let it cool slightly, then dig in.

Give the casserole a few minutes to cool before serving. Then add whatever toppings make you happy—chopped cilantro, crushed tortilla chips, sour cream, or guacamole are all good choices.

And that’s dinner!

Expert Tips

Use rotisserie chicken if you want to make things extra easy. There’s absolutely nothing wrong with taking a shortcut here. Shred the meat, toss it in, and you’re ready to go.

Drain those canned ingredients. Be sure to drain the corn and black beans, and give the black beans a quick rinse. You don’t need all that extra liquid going into the casserole.

Don’t skip the foil at first. The casserole needs that covered baking time before you uncover it and let the cheese get beautifully bubbly on top.

Give everything a good stir. You want the chicken, rice, beans, corn, and ROTEL spread throughout the casserole so every scoop gets a little bit of everything.

Let it rest before serving. I know, I know. The casserole is sitting there smelling amazing and you want to grab a fork immediately. But giving it a few minutes to cool makes it easier to serve.

Recipe Variations

This casserole is pretty forgiving, so there’s room to make it your own.

Use leftover chicken. This is one of the easiest ways to turn yesterday’s dinner into today’s dinner. Just shred or chop the cooked chicken and carry on.

Try cooked rice. If you don’t have instant rice on hand, cooked rice can be substituted. Just remember to reduce the chicken broth slightly so the casserole doesn’t end up too soupy.

Change up the cheese. Mexican blend cheese is delicious here, but cheddar or Monterey Jack would work beautifully, too. Basically, if it melts nicely, you’re in business.

Add your favorite toppings. Cilantro, crushed tortilla chips, sour cream, and guacamole all bring something different to the party.

Make it ahead. You can assemble the casserole up to a day ahead, cover it, and refrigerate it until you’re ready to bake. Just allow a little extra time in the oven if it’s still chilled.

Storage & Reheating

Got leftovers? Lucky you.

Store the casserole in an airtight container in the refrigerator for up to 4 days.

For individual portions, the microwave is probably the easiest way to reheat it. If you’re warming a larger amount, the oven works nicely, too.

And yes, you can freeze this casserole.

Assemble it, cover it tightly, and freeze for up to 3 months. When you’re ready to make it, thaw it overnight in the refrigerator and bake as usual, adding a few extra minutes if needed.

Serving Suggestions

This casserole is hearty enough to be dinner all by itself, but a few toppings can make it even more fun.

I especially like serving it with chopped cilantro, crushed tortilla chips, sour cream, or guacamole.

The tortilla chips add a little crunch, the sour cream makes an already creamy casserole even creamier, and the guacamole adds a fresh, zesty bite.

You could also put out a simple green salad or some extra tortilla chips alongside it if you’re feeding a crowd.

Honestly, this is the kind of dinner that makes a busy night feel a whole lot easier. Get everything into the dish, let the oven do its thing, and before you know it, you’ve got a hot, cheesy Chicken Burrito Casserole ready for the table.
