The Ultimate Better-Than-Takeout Chicken Fried Rice – Fast, Flavorful, and Foolproof!

Chicken fried rice is one of those meals I come back to again and again. On busy weeknights, it’s hard to beat a dinner that comes together in one pan and tastes every bit as satisfying as your favorite takeout.
As the chicken browns, the garlic becomes fragrant, and the rice crisps around the edges, the whole kitchen fills with the kind of aroma that lets everyone know dinner is almost ready.
What I love most about this recipe is how simple it is.
There are no complicated techniques or specialty ingredients—just tender chicken, colorful vegetables, fluffy rice, eggs, and savory soy sauce cooked together into one flavorful meal.
It’s quick enough for busy evenings, great for using leftover rice, and delicious enough to make again and again. Once you try it, homemade fried rice might just become your new weeknight favorite.

For the Chicken Fried Rice
- Sesame Oil – Adds a rich, nutty flavor that gives the fried rice its signature restaurant-style taste.
- Canola or Vegetable Oil – Used for cooking the chicken at a high temperature without overpowering the other flavors.
- Boneless, Skinless Chicken Breasts – Tender, lean chicken makes this a hearty and satisfying meal. Cut the chicken into bite-sized pieces so it cooks quickly and evenly.
- Frozen Peas & Diced Carrots – A convenient shortcut that adds color, texture, and a touch of natural sweetness. There’s no need to thaw them before cooking.
- Green Onions – Bring a mild onion flavor and fresh finish that brightens the dish.
- Garlic – Fresh minced garlic adds bold, savory flavor and is one of the key ingredients that gives fried rice its irresistible aroma.
- Large Eggs – Scrambled directly in the pan, the eggs add richness, protein, and classic fried rice texture.
- Cooked Rice – Day-old rice works best because it’s drier and fries up beautifully without becoming mushy. White or brown rice both work well, and pre-cooked rice is a great time-saving option.
- Low-Sodium Soy Sauce – Seasons the rice with savory, umami flavor while letting you control the saltiness of the finished dish.
- Salt & Black Pepper – Optional, but perfect for adjusting the seasoning to your personal taste before serving.

Better-Than-Takeout Chicken Fried Rice
Ingredients
- 2 tbsp sesame oil
- 2 tbsp canola or vegetable oil
- ¾ to 1 lb boneless, skinless chicken breasts, diced into bite-sized pieces
- 1 ½ cups frozen peas & diced carrots mix (no need to thaw, straight from the freezer works!)
- 3 green onions, sliced thin
- 2 to 3 garlic cloves, minced
- 3 large eggs, lightly beaten
- 4 cups cooked rice (white or brown—whatever you like! Shortcut: Use two 8.8-oz pouches of pre-cooked rice)
- 3 to 4 tbsp low-sodium soy sauce
- Salt & pepper to taste (optional)
Instructions
- Cook the chicken – Heat up a large non-stick skillet or wok over medium-high heat. Add the oils, then toss in the diced chicken. Cook for about 3 to 5 minutes, flipping occasionally so all sides get nice and golden.
- Remove & set aside – Scoop out the chicken with a slotted spoon (leave the oil in the pan—it’s got flavor!). Set the chicken aside on a plate.
- Cook the veggies – In the same pan, add the peas, carrots, and green onions. Sauté for about 2 minutes, stirring occasionally until they start to soften.
- Add the garlic – Stir in the minced garlic and cook for 1 more minute until fragrant.
- Scramble the eggs – Push the veggies to one side of the pan. On the empty side, pour in the beaten eggs and scramble them up.
- Bring it all together – Add the cooked chicken back in, toss in the rice, and drizzle soy sauce over everything. Stir well to combine. Let it cook for 2 more minutes, just enough to reheat the chicken and blend the flavors.
- Taste & adjust – Add salt & pepper if needed. Give it one final stir and you’re done!
Notes
Storage & Reheating Tips
- Best when served fresh and warm.
- Leftovers? Store in an airtight container in the fridge for up to 5 days or freeze for up to 4 months.
- Reheat gently on the stovetop or in the microwave—just add a splash of water to keep it from drying out.
Nutrition

1. Can I use freshly cooked rice instead of day-old rice?
Yes, you can! Day-old rice is the classic choice because it’s drier, which helps the grains stay separate and gives you that signature fried rice texture. But don’t let that stop you from making this recipe. If you’re using freshly cooked rice, spread it out on a tray and let it cool completely before adding it to the pan. It’ll make a big difference.
2. What’s the best rice for chicken fried rice?
Honestly, whatever you have will work. Long-grain white rice is my first choice because it stays light and fluffy, but jasmine rice is fantastic if you love a little extra fragrance. Brown rice is also a great option if that’s what you normally keep in the pantry. The only real rule? Make sure the rice is cooked and cooled first.
3. Can I add other vegetables?
Absolutely! Fried rice is one of those recipes that’s perfect for cleaning out the fridge. Bell peppers, broccoli, mushrooms, corn, snap peas, spinach, or even leftover roasted vegetables all work beautifully here. Just don’t overload the pan—you still want plenty of rice in every bite.
4. How do I keep fried rice from turning soggy?
The secret is surprisingly simple: use cold rice and cook over fairly high heat. Fresh, steaming rice holds too much moisture and tends to clump together. Cold rice fries instead of steams, giving you those fluffy grains and lightly golden bits that make homemade fried rice taste like takeout.
5. Can I make chicken fried rice ahead of time?
Definitely. In fact, it’s one of those meals that’s just as handy the next day. Store leftovers in an airtight container in the refrigerator for up to 5 days, then reheat in a skillet or microwave. A small splash of water while reheating helps bring the rice back to life so it stays soft and fluffy instead of drying out.
