The Best Garlic Butter Steak Bites with Herb And Baby Potatoes

Garlic butter steak bites with crispy herb potatoes are the kind of skillet dinner that feels both simple and special.
Cooked in one pan, the steak turns juicy and golden while the potatoes soak up rich garlic butter and fresh herbs.

As everything sizzles in the skillet, the kitchen fills with the warm aroma of rosemary, garlic, and butter.
By the time it’s done, you have tender steak bites and perfectly browned potatoes ready to serve.

It’s the kind of meal that tastes like it came from a steakhouse but takes less than 30 minutes to make.
With just a handful of ingredients and one pan, it’s an easy dinner you’ll want to cook again and again.

For the Garlic Butter Steak Bites

  • Sirloin Steak – cut into bite-size cubes so it cooks quickly and develops a nice golden crust in the skillet. Sirloin stays tender while still being flavorful.
  • Baby Red and Yellow Potatoes – these cook up crispy on the outside and tender inside. Cutting them into small cubes helps them cook faster.
  • Garlic – freshly minced garlic adds the rich savory flavor that pairs perfectly with steak and butter.
  • Fresh Parsley – brings a light, fresh flavor that balances the richness of the dish.
  • Fresh Thyme – adds an earthy, aromatic note that complements both the steak and potatoes.
  • Fresh Rosemary – a classic herb for steak that gives the dish a warm, savory depth.
  • Red Pepper Flakes – adds a subtle touch of heat. You can adjust the amount depending on how spicy you like it.
  • Salt and Pepper – essential for seasoning the steak and potatoes and enhancing all the flavors.

For Cooking

  • Butter – melts into the skillet and creates the rich garlic butter flavor that coats both the steak bites and potatoes.
  • Olive Oil – helps the steak and potatoes cook evenly and prevents the butter from burning while searing.

Notes

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 lb baby red and yellow potatoes, cut into ½-inch cubes
  • 3 large garlic cloves, minced
  • 1 teaspoon fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • ¼ – ½ teaspoon red pepper flakes (adjust to taste)
  • 1 – 1¼ lb sirloin steak, cut into 1-inch cubes
  • Salt and pepper, to taste

Instructions

  1. Place a large skillet over medium heat. Add ½ tablespoon olive oil and 1 tablespoon butter, allowing the butter to melt completely.
  2. Add the diced potatoes to the skillet along with the garlic, parsley, thyme, rosemary, and red pepper flakes. Cook for 5–6 minutes, stirring occasionally, until the potatoes are tender but still slightly firm. Season with salt and pepper to taste.
  3. Transfer the cooked potatoes to a plate and set them aside.
  4. Remove any burnt bits of garlic or herbs from the skillet. Increase the heat to high. Once the pan begins to lightly smoke, add the remaining ½ tablespoon olive oil and the remaining 1 tablespoon butter.
  5. Place the steak cubes into the hot skillet. Let them cook undisturbed for about 1 minute so they develop a good sear.
  6. Continue cooking the steak, turning occasionally, until browned on all sides and cooked to your preferred doneness, about 4–6 minutes. Season with salt and pepper.
  7. Add the potatoes back into the skillet and cook for 1 additional minute, just until everything is warmed through.

1. What’s the best steak to use for steak bites?

Sirloin is my go-to. It’s tender, flavorful, and cooks quickly in a hot skillet. Ribeye or strip steak also work great if you want something a little richer. Just cut the steak into even bite-size cubes so everything cooks at the same speed.

2. How do you keep steak bites tender?

Two simple things make a big difference. First, cut the steak against the grain. Second, don’t overcook it. Because the pieces are small, they only need a few minutes in a hot pan to get nicely browned while staying juicy inside.

3. Why cook the potatoes first?

Potatoes take longer to cook than steak. Giving them a head start lets them become golden and tender before the steak goes in. Then the steak can sear quickly without overcooking.

4. Can I prep anything ahead?

Yes! You can cube the steak and chop the potatoes earlier in the day. Store them in the fridge until you’re ready to cook. When dinner time rolls around, everything will come together in minutes.

5. How do you get a good sear on the steak?

Make sure the skillet is really hot before adding the steak, and don’t overcrowd the pan. Let the steak sit for about a minute before stirring so it develops that golden crust.
